babycakes is a pretty well-known bakery in new york city specializing in gluten-free and vegan cakes and cupcakes. i feel like these recipes would be valid to follow (if the caloric content isn't too high!)

Source of modified food starch depends on the coutnry of origin. Hopefully someone else can give you more details.

I was just surfing the Food Network website and came across a video I thought you might all enjoy watching. Because I have a couple other programs open that are rather big, the video feed was really slow so I didn't watch it all, but what I saw was good. One thing I did wonder though, is the lady who is GF mentioned that Modified Food Starch has Gluten in it. I thought the majority of MFS today was from corn? Or are we wasting to much of it making fuel and they've reverted back to using wheat? (sorry when your married to a farmer, using food for fuel doesn't make sense!) Anyway, take a look, we've finally made the big time!
