A cooler is a good idea. I've done that before and pre-made stuff at home and stuck it in a cooler. Maybe some cheese sticks or cheese. Lots of fruit. Bagged salad. Sandwich fixings. They always have ice at the hotels, so keeping it cool is not a problem. Bring a few gallon and/or quart size baggies (sealed type) to keep the ice in. Cut up carrot sticks, celery, cucumber, etc.
