ANNEMARGAR -- I've never had any problem with portion sizes, if only because I add so many mix-ins like fruit and nuts. I find it to be very filling. It can be calorie dense, but since it's so filling, I can often forgo midmorning snacks and have a lighter lunch, which compensates. You can also bake steel cut oats like a casserole and heat it up over the week, which is also so delicious! I'm a steel cut oat fanatic, as you can probably tell. : )

I make a big pot of some sort of veggie soup, usually with some brown rice and/or lentils just about every week. Especially in the winter it is a staple for us:)
I have heard so many people say that crock pot oatmeal is the bomb. I really need to try that!

I like making steel cut oats in the crock pot on the weekends and warming servings up for breakfast as the week goes on. I like to add fruit and nut combos for added flavor and protein. My favorites are banana/walnut, blueberry/pecan, peaches/almond, strawberry/banana/macadamia, banana/chocolate/peanut. So delicious!
I second making big pots of beans too. You can eat them a million ways all week long.
At least twice a month we make salsa chicken in the crockpot. I usely make a large batch of chicken breasts and top with homemade salsa, let cook all day. We use the chicken for the next few days: tacos, salads, pita sandwiches, omelets,etc. Sometimes I will cook brown rice with the chicken for an extra side.

Very good one! I love my roast in the crock pot. WE are still messing around with seasonings to get the flavor great. Love my beans in the crockpot also :D
