As far as the fat & cholesterol ... I don't even Track it. I'm *not* worried about it, the foods I'm eating are good; that's all I need to know. (I *never* got the whole "low fat" craze. I'm not into 'altered' food.) for sharing the article. I *really* enjoyed reading it. To think all because one man wanted to be "right". Ugh. Thanks again for making me think; *always* appreciated.

That article uses the term "rotisserie chicken". I'm thinking they are talking about gross, factory farmed, toxic chicken that is put in a rotisserie at the supermarket and sold right there warm, ready to eat. Perhaps they are talking about any meat that is subjected to high heat such as pan frying, grilling, roasting etc. I too have read about this and it is worth considering when preparing meats. But honestly, I will most probably continue to eat high quality, humanely raised meats and will continue to totally refuse to eat any commercially mass produced meats until all the toxic junk, more dangerous than HCASs, is banned from them. Especially bad are those deli meats which are ground up mystery meats and...who knows what. YUCK!!
There are some very nice, non toxic hot dogs available. No nitrates, no nitrites, organic, free range chicken dogs and beef dogs. Kids love them. Even I like them!
This article is just another example of headliner-freak-out-sensational reporting with little or no educational value at all. Sorry, I'm just a grumpy old lady here still a bit hung over from the 4th...not bad really; just being silly.

Yeah, it says to ditch the hot dogs as well, but it still makes me glad I don't eat meat when I keep reading about HCAS and other carcinogens.

Good point Evelyn. Whole, pure foods is what we are talking about here; NOT refined, processed stuff that comes in boxes, bags, jars, packages, etc. We're talking about fresh eggs, bacon, real butter, whole milk, beef (not so lean!), chicken (LEAVE THE SKIN ON PLEASE).
Another story is the difference between raw, unpasteurized dairy products, free range (ground raised) chicken, their eggs, grass fed and all sustainably raised produce and animal based foods and the conventional grocery store brands. These natural kinds of foods are the healthiest and are TRULY clean of toxic things. Grocery store brands are typically not free of toxic substances.

Now folks, remember these are saturated fats & cholesterol from real, unprocessed, food. Once it's processed all bets are off.
As a culture, we have been living under a false notion that saturated fats and cholesterol are dangerous to our health. This theory has been proven to be dangerously wrong over and over again.
