...OMG...I learned this today at my local fish market...sea scallops being sold as "fresh", are actually canned on fishing boats and treated with Sodium Tripolyphosphate...if you notice your scallops shrinking down to nothing and/or having a soapy aftertaste, they most likely have been over processed...Scallops labeled "dry" have been freshly shucked, and aren't treated with the preservative, but of course, are more expensive...sheesh...every damn thing we eat has to be investigated these days...
And yes, when I Googled Sodium Tripolyphosphate, the info isn't good news...
