Thanks for that fitski, I thought there was a good recipe like that floating around here. Thank you!

I'm even having a lot of second thought about sweeteners with erythritol in them; it's just not natural. I'm gradually saying good bye to my sweet tooth and when I want a little sweetening I use raw honey or pure maple syrup. I also use liquid stevia extract occasionally; It only takes 2 or 3 drops to make something sweeten up.

Ani is right about the agave. Not only is it highly processed, but the composition of it makes it even higher GI than HFCS. It's not the healthy choice that it's been made out to be.

Soy isn't all the market makes it out to be either. It may be high in protein but it is high in several bad things as well. If you are using soy in any form you will want to make sure it is certified organic or you will be consuming genetically modified organisms (GMOs). Also soy is high in estrogenic compounds which can really mess with your hormones. And, as you probably already know soy is highly allergenic. Then, when you study the soy agriculture and see how it is ruining our soil and pushing out the small farmers it becomes clearer why many people are backing off of soy.

Because of all that I will not eat soy; there are many other great and even better sources of protein. I won't even buy dog food that has any grains or soy in it. My dog's health has improved dramatically since I cleaned up his diet.

clean birthday cake??
No sugar, whole wheat (or other clean) flour... not sure what you could do for the icing.... maybe make this pudding and spread it on top??

I just bought some agave at Trader Joe's today, just to try it. What is it that you don't trust?

Also... if I make my son's birthday cake from scratch is it considered clean?

Yes, interesting and probably very tasty. I have made very similar puddings leaving out the soy (which I stay away from) and also the agave (which I don't trust) Stevia will work well for sweetening or something natural and trustworthy like maple syrup or raw honey. If you use banana instead of avocado you will get more sweetness but I think the avocado gives better texture. AND it is full of healthy fat.
