I'm still thinking about what I am going to fix. I just took a free range chicken out of the freezer. I'll either roast it in the oven or grill it. I'm thinking baked sweet potato and some kind of green veg. That seems to be my go-to trio for any special meal (good piece of fish or grass fed meat / baked sweet potato / green veg or salad), to me, the perfect healthy meal.
