Azuki beans are SO good! I get them from the bulk bin at my health food store. They are good in Mexican recipes, as already said, and they also make yummy sprouts in three or four days.
My grocery bill has gone down since going vegan. I don't know why some people find it impossible to eat cheap and healthy. My bulk grains, beans, lentils and brown rice are very affordable even though organic, and it seems greens are always affordable. No one seems to like kale and swiss chard as much as I do, though I just read in Alicia Silverstone's book that chard is more acidic, so I should probably increase my kale and decrease my chard over time.
