I like to use veggies as subtitues in regular recipes.

Applesauce or pumpkin in cake/cookies/muffins/pancakes.

Zuchini instead of apple in Apple Crisp.

Peach smoothies.

Yam Blondies.

Now I want to bake!

Mmmm... root veggies also make good hash browns. They taste so much better than just plain ol' potatoes!

I have to send another shout-out for the love of squash. Most come with a sticker on them with some basic preparation instructions, too, which is really helpful.

I just came across a recipe in a magazine from last year. It is acorn squash (roasted) with some type of cranberry/sauce.

I really looks and I'm going to give it a try. Looks like it would be great to serve on Thanksgiving.

SCORPIO2010--Looks like you pretty much covered the bounty of fall/winter veggies.

I've already been eating my share of squash (all varieties, including pumpkin)--and I've also been making my own pumpkin puree and freezing it.

Along with all the veggies, take advantage of the abundance of apples available this time of year. I've been buying a wide variety of these also--for making applesauce, apple butter, dried/dehydrated apple slices, baked apples, in addition to just enjoying a fresh crisp apple.

I just came back from the farm where I get my goat milk and some eggs. I spoke to the farmer's wife about putting up squash and she said she always just chunks them up and roasts them just until they are done on the surface. Then she packs them in freezer bags and freezes them. Voila! I'm going to go do the same now with my squash.

I love to roast all fall veggies! Have a great recipe for beets - quartered, butternut squash sliced and halved, brussel sprouts, carrots, yams quartered, sweet onions sliced and quartered, whole garlic, and any other veggie you might want to add. I use pam olive oil spray in pan and on top of veggies. Preheat oven to 500 degrees, turn veggies once or twice during cooking, and cook to your tenderness liking. Be careful to count to carbs in your portion. These roasted veggies are always an adult crowd pleaser.
