I love to roast all fall veggies! Have a great recipe for beets - quartered, butternut squash sliced and halved, brussel sprouts, carrots, yams quartered, sweet onions sliced and quartered, whole garlic, and any other veggie you might want to add. I use pam olive oil spray in pan and on top of veggies. Preheat oven to 500 degrees, turn veggies once or twice during cooking, and cook to your tenderness liking. Be careful to count to carbs in your portion. These roasted veggies are always an adult crowd pleaser.
