Hope it's not too late to add one, but my fav hearty side is -

Can of black beans rinsed and drained
Red bell pepper
Red onion or green-tailed onion
Frozen corn (if you prefer - I don't)
Cilantro
Feta cheese
Avocado (if you prefer)
Juice from half a lime

Mix together and eat - it's like a meal. Use as much of the ingredients as you prefer or leave out what you don't like. Can eat as a side or in a whole wheat pita.

Early this week we had an office 4th celebration. To make it through I made the salad below. The dressing is the only thing that is not 100% clean, but I don't think it is too bad

10oz bag baby spinach
1 pint sliced strawberries
1/2c sliced almonds
2 grilled chicken breasts sliced
4tbsp annies organic raspberry vinegarette

The sald was a hit. I ate a big bowl of this and then a little taste of the stuff I really wanted was more than enough to satisfy.

One of my favorite picnic standbys is tabouli. Go to Spark Recipes and you will find many versions.

It is a healthy grain salad. It looks strange to some at first but it also looks so pretty with all of the beautiful colors in it. People will try it and love it. Now when I go to barbecues I get requests to bring that as my dish to contribute.

I like bean salads and I have a favorite recipe for a wheat berry side dish with carmelized root vegetables. I want the quinoa zuchinni brownies recipe!

For the SpRally we had last weekend, I made a Black Bean and Roasted corn salsa that one of the girls ate on bread with avocado...

I also made a whole wheat pasta salad with pinto beans and tons of veggies...I dressed it with Annie's Organic dressing!!!

And a huge fruit salad!!!

I also did a roasted red pepper hummus that was a great hit and could be eaten on bread or on a wrap!!!

I also made Quinoa Zucchini Brownies and a batch of raw brownies with an avocado fudge frosting!!!

Going to a cookout this weekend at MIL's. Burgers and dogs. There will be a veg tray, but I'm going to need something as a main dish that I can eat.

I'm looking for a side dish to take. I would like one substantial enough that I can consume it as a main dish without drawing attention to the fact that I'm not eating the food provided.

Lay em on me.
