Hope it's not too late to add one, but my fav hearty side is -
Can of black beans rinsed and drained Red bell pepper Red onion or green-tailed onion Frozen corn (if you prefer - I don't) Cilantro Feta cheese Avocado (if you prefer) Juice from half a lime
Mix together and eat - it's like a meal. Use as much of the ingredients as you prefer or leave out what you don't like. Can eat as a side or in a whole wheat pita.

One of my favorite picnic standbys is tabouli. Go to Spark Recipes and you will find many versions.
It is a healthy grain salad. It looks strange to some at first but it also looks so pretty with all of the beautiful colors in it. People will try it and love it. Now when I go to barbecues I get requests to bring that as my dish to contribute.
