I have another recipe rave! I tried the minestrone soup out of the book. It was a ton of chopping - which is not my forte - but overall very simple and now I have a TON of soup (it made 2 dutch ovens full). I plan on freezing half of it and eating on the other half this week.

I had it for dinner tonight; it was very tasty and super-filling. I can only imagine it will taste better and better as the flavors have time to meld.
