you can reconstitute them but only if you want to use them in omelets with one whole egg and additional egg whites. I guess it wouldn't work if you wanted to use them for hard boiled egg whites. Yes, mostly I use them in baking, I have never tried the egg beaters either. I guess you will just have to feed the yolks to the dog. Or the neighborhood raccoons. Or put them out on the bird feeder. They would be appreciated there and believe it or not, birds love 'em!

Dried egg whites are normally used in cake frosting. I don't think that it could be reconstituted successfully.

On the issue of being wasteful, the companies that produce eggbeaters throw the yolks away (or use them for mayonnaise or other yolk based products). ;) I guess by buying the eggbeaters, there is a chance the yolks get used, whereas if you buy the whole egg you are more likely to throw them out.

Can you use the dry ones for scramble? I would still have to buy the actual eggs I think cause I like the hard boiled egg whites. A member on another message board (about the same subject,on this same team) had a good way of looking at the wasteful feeling of throwing out the yolk and she said just look at it the same as the fat on meat or chicken that you cut off and throw away, this is the fat of the egg that you throw away.

There are also egg white sold dry in a can that will keep nearly forever. They are sold in the same isle as the flour and sugar, etc. The brand I have is Deb El Foods and there is nothing in it except pasturized dried egg whites, nothing added. No refrigeration is required. An 8 oz. can is the equivalent of 4 and 3/4 dozen egg whites. diane

Eggbeaters are perfectly fine and you also can buy egg whites in a carton(small milk carton). They are alittle more expensive but your not throwing anything away.

I've never heard of egg whites being sold in the shell without the yolk, is that what you're talking about? If so, what store and how much? I'm tempted to start using the eggbeaters cause I hate throwing out half of what I just paid for especially with the price of eggs nowdays. I've heard somewhere on SP that it's ok on the clean eating lifestyle to eat the eggbeaters, anyone heard any different?

I was able to purchase a "carton" of egg whites. Not fake eggs but the actual whites. They are pasturized to no risk of salmonila if you choose to have them raw. Also no seperating or throwing anything away.

I honestly have no expertise in this area. So I won't venture to give any advice. Just thought I would toss that little bit of info out. May be more expensive up front, but there is no waste either so I think it balances out.

Oh, I have a question about egg whites, too.

I'd been buying organic eggs, to avoid consuming whatever chemicals and drugs they're feeding the poor chickens. But then my mother started insisting that she'd heard that all the bad chemical stuff went into the yolk, not the white. So she argued that if I'm only eating the white anyway, there's no need to buy the organic.

My mother is frequently full of misinformation, but I'm really curious about this one. Anyone know if this is true?

The egg yolk is high in cholesterol. If your trying to keep cholesterol under control (like myself) the yolk gets tossed out.
