Thanks everyone! I love all the ideas. Especially the juicing. I've been looking at juicers but hadn't decided. Now I'll have to reconsider. I will definitely try the pumpkin in the brownies! I will continue to try raw veggies too. Maybe if I dip them I will enjoy them more. I live in New England and fall is here. I may make some soup this weekend. Thanks everyone again! I knew you'd all have great ideas!

Ok, i'll try the pumpkin thing. since it's gettng cooler, i'll also do soups. when it's so hot outside i absolutely HATE to cook soups and i don't like them cold at all.

Just want to revisit the raw veggie discussion (or lack of!)...chances are that there IS a veggie you'll like raw...you just have to try them all. I snack on zucchini sticks and cucumber slices (uh, not at the same time). Either of these is usually a snack during the afternoon, followed by my "pre-dinner" snack of frozen grapes around 6.

We don't eat dinner until around 8 in this household, since my husband works so darn late.

But anyway, don't give up on raw veggies!

I like the soup ideas mentioned here too...there's that classic WW one with carrots, tomatoes, and zucchini as well. I throw a ton of white pepper in it for punch!

Hope you find some great solutions!

I have the Juiceman (Professional Series 410). I got tired of mine also awhile back and took it off my counter but now it's back on the counter for good...right next to my blender and my fruit bowl. (I use the blender for smoothies)

I don't like cleaning it either but I learned the quicker I clean it the easier it is to wipe up. When I let it the food sit and dry it is harder to clean.

You should pull it out and start juicing again.

Juicing is a GREAT idea! I used to have a Jack LaLanne juicer but sent it back because the lid got stuck incorrectly and then when I tried to get it off, part of it broke. I now have a Juiceman Jr. It's sitting in the closet because I got tired of cutting up fruits and veggies and also hated cleaning the machine.

What kind of juicer do you have Sandra?

I have a juicer and when I don't have the urge to eat my veggies I will juice them. I always do carrots and celery with a small piece of ginger and sometimes sweeten it up with an apple or orange.

I'd make a suggestion, but all the ones I can
think of have boon made, except, maybe for 1. I like to dump a couple of cans of it in my chili. Pumpkin bread is real good to, but Jane said baking. And like Dee said, spaghetti & meat sauce. @ no it won't change the taste @ all.

As for the brownies, the very quick and dirty way is to add the can of pumpkin (or remnants after the poodle gets her medicinal teaspoon) to your favorite box of brownie mix, but eliminate the oil. Kelly, I think you can eliminate the eggs instead of the oil. There are actually recipes on Spark that mention doctoring cake mix with pumpkin and eliminating both oils, but IMHO, some oil is needed for the quickbread dough to rise. Whether I've whipped together healthier brownies or cupcakes, they always go quickly at church coffeehour!

In hot weather I make a vegetable soup that I refridgerate and eat cold. It consists of celery, carrots, summer squash, tomatoes, and cabbage. I add different seasonings, depending on the type of flavor I want. Sometimes I make it sweet and hot in flavor by adding a little brown sugar and tabasco sauce; sometimes I combine chicken and beef boullion for a "different" taste. You can add any veggies you like to it. Don't forget to use either water or tomato juice for the broth. I vary it. It's very refreshing on hot days.

I also prefer pasta dishes with veggies rather than meat and then top it off with cheese.

Do you like omelettes??? If so, you can make a veggie omelette.

That's a good idea putting them into soups and I never thought about putting pumpkin into anything. Doesn't it change the flavor of things?

Canned pumpkin! What a great idea. I love pumpkin. Hmmm - these brownies sound yummy. Will you share the recipe? And, why didn't I think of soups? Probably because it's been hot up until now and the thought of eating soup didn't really appeal to me. But now that the weather's getter cooler - great idea. Thanks! emoticon

For soups, stews and many baked goods, canned pumpkin can be added during the cooking process. It's the "secret ingredient" in my healthier brownies. Pumpkin fits the new season (or today's weather). Also, about a teaspoon's also useful if the pooch has eaten a bone or the like and is getting constipated. Also, cooked veggies (including frozen and leftovers) can often be added to soups (I added leftover roasted veggies to potato soup yesterday) and pizza and pasta dishes.

Hi all! I've been having a tough second week back on my plan and would like to ask for some help. I need ideas to get more veggies into my diet. I like them I just don't seem to be able to find a way to eat them. I'm not real crazy about raw ones although I know they are good for you. Any suggestions? Also, what keeps you all motivated? I need some tips there too! Chiyo and Toji thank you all for helping their Mommy! emoticon
