Made Chocolate Chunk Bread Puddings from Cooking Light tonight. They're very rich, but only 319 calories each (10.6g fat). And they're a decent size, so I could possibly see eating just half at once. Sinfully delicious!

I used to babysit a couple of little ones along with my own two kids, and after trying to feed them, one was an infant, and chase three others around at lunch time, I couldnt rememeber if I ate or not. I found I was always finishing up their plates so nothing was wasted, and I sure put the pounds on. I was raised by parents who felt you should clean your plate, and your neighbors, too. Waste not, want not. Or else there were starving children in other countries who would be happy to have my food. You know the whole guilt trip thing. I wish my husband would be a beter sport and more agreeable when it comes to food. I like to experiment a little, he is steak & potato only.

The only thing baked at my house yesterday were biscuits and cornbread. We made red beans & rice for dinner and had leftover soup for lunch. The biscuits were for breakfast.

LOL. I hated throwing things away too. Part of my problem is eating the rest of the kids food, or finishing off the little bit left in the pot so that I didn't throw it away. Then I end up stuffed. LOL. Then it just kind of clicked a few weeks ago that we have a BIG dog, that likes goodies. So now, when the kids are done eating they will scrape their leftovers into Buddy's bowl outside, and boy does he love them for it. I'm loving it too, because that means I'm not eating it. LOL.

I'm throwing the peach delight away today. My husband ate one serving and I ate two. I love to bake, but I hate throwing away food. That's one reason I've gained weight--I used to be a human garbage disposal. It's hard now that there's only the two of us. I need to bake and share with neighbors--this is a thought.

Good for you. I've been lucky. My hubby will eat whatever and he loves too cook too. Our trash pickup has always been on Friday--so Thursday night at our house was "leftover" night. Whatever was in the fridge was heated up and you could eat what ever you wanted. Rest went in the garbage.

I always called it our Thursday night smorgasboard. We have a large square coffee table in the den and I'd put a tablecloth on it with all of the leftovers. It was the only night of the week that the TV was on during mealtime. I never had a problem getting them to eat on Thursdays. Their friends would even request an invitation to Thursday night dinner. hehe I've had as many as 8-10 kids for Thursday leftovers. It was always a fun night. I miss having kids in the house.

I love cookbooks too. Every time my husband sees another new cookbook, he says why do you buy them? You never cook anything out of them. So NOW I try at least 5 recipes from each cookbook, before buying another. He's kind of picky, and claims he doesnt like casseroles. If thats what I fixed, he eats it or else! He started complaining that when I fix roast beef, he has to eat roast beef for 5 days in a row. He made the mistake of making that comment one night, in a crowded bar, in front of a couple single buddies, who usually eat a burger at the bar. They sat there drooling, and told him he should be happy he gets roast beef at all. So I made extra sure he did not get the same food in a 60 day span. Any leftovers were taken to work, shared with neighbors, or brought to the bar for the single guys. They were starting to give me orders for what they liked, so I would make it and bring them some. One night I fixed fall off the bone baby back ribs, and was he ever angry when he went to fridge later that night looking for one more rib to nibble on! Told him, too bad, YOU dont like to eat the same thing "over & over", so if not eaten at meal time, I would rather give it away than listen to you complain. He's starting to rethink his "one way" attitude.

I made peach delight on Sunday. Ate 2 helpings on Monday. I took the rest to work today to remove the temptation.

I love cookbooks and purchased two at Sam's on Sat. One is Duncan Hines Classic Recipes. It has all kinds of recipes using cake mix and other Duncan Hines products (muffin mixes, etc.) I can't wait to try some of them. Best of all, it was only $6.88.

LOL. I can say I don't mind unhealthy things being posted. I still make tons of sweets, but I've been really good at regulating myself lately. LOL. Last night I cut myself a piece of cake, then looked at the calorie counter and the cake would have put me over by 100 calories, so I went and put the piece back. LOL. But I did feel really proud of myself, and when I hubby saw me putting it back he was SHOCKED. LOL. As to the willpower thing though, there ARE times of the month when I seem to just want to GORGE myself on sweet stuff. LOL. THOSE are the times when I nee to keep sweets out of the house.

My sister in law served a decadent dessert yesterday. I didnt spend much time figuring out the calories, nor the recipe. All I can remember was it started with a crust, seemed to be crushed cookies mixed with butter or cream cheese, with chopped nuts. Topped with a cream cheese type filling, then a layer of lemon filling, maybe it was pudding, then another layer of something white and sweet, maybe meringue? or whipped topping, then sprinkled with the crust ingredients. She prepared it on a 12x14 jelly roll pan, and kept it in the refridgerator, or at least she tried to. Everyone kept sneaking into the kitchen for another "tiny" bite. She has a magnet on fridge door that says any food eaten while standing or with the fridge door open does not contain calories or fat, and therefore does not count. My bathroom scale does not have the same cute little message this morning!

OOOOHHHHH MY GOODNESS!!!!!!! That is definately going to go on my list of things to make. LOL. That sounds SOOOOO good. And your idea of keeping it in the freezer it bite sizes sounds PERFECT.Our family tradition is that we have brownie sundaes on the 4th of July while we watch the fireworks. But I usually buy the frosted brownies from the grocery store, because when you nuke them for like 15 seconds the frosting turns all hot and fudgy then we put ice cream on top. LOL.Thanks for the great idea.

Gosh this makes me want something sweet. When I lose 5 lbs maybe I'll make your Black Forest Trifle. That just sounds delicious.

Another thing I do with the brownies. I'll bake a 9x13 pan of brownies and when I start mixing them up, I'll set out a 1/2 gallon of vanilla ice cream to soften.

After the brownies bake, I let them cool and then tear them up (in the pan they baked in) with a fork. I add the softened ice cream and spread the mixture evenly in the pan and return the pan to the freezer.

As soon as it is set, I cover the whole pan with a jar of hot fudge sauce and return all to the freezer. Then when I want a bite of something sweet, I just cut a small piece and LOVE every bite. This way I can control how much I eat since it's frozen.

Once it's frozen hard, you will need to let it sit outside the fridge for 10 minutes so it can soften enough to cut. I usually cut the whole pan that first time. That makes the pieces easier to remove.

It's great to have for unexpected guests. If I'm serving it as a dessert, I usually heat up additional hot fudge sauce & pour over individual servings. Top with whipped cream and a cherry.

Guess I should have said that I bake the brownies in a 9x13 pan. I use the Martha White rich & chewy brownie mix that comes in the red bag. They're sooooooooooo good.

Yum! I've never thought about pie filling--and I always add almond extract to cherry pie filling.

I make CHOCOLATE SIN with a package of brownies, a jar of caramel ice cream topping, instant vanilla pudding, Hershey's chocolate syrup, Hershey's chocolate toffee pieces, cool whip and chopped pecans. (can sprinkle cake pieces with Kahlua for a more decadent treat)

Use 1/2 of each item and layer beginning with cake, caramel topping, chopped pecans, pudding, chocolate syrup, chocolate toffee pieces, cool whip. Repeat layers. Finish with cool whip, drizzle choc syrup over and swirl with a toothpick. Sprinkle chocolate toffee pieces and pecans in several spots and top with a maraschino cherry. Better made the day before you plan to eat it. It is definitely sinful.

p.s. You won't use the whole can of chocolate syrup, but will use all of the other items.

Oh that sounds so good. We always make trifles at family get togethers. Lately the one I've been making is a black forest trifle. I use dark chocolate cake, and cut into cubes. One box white chocolate pudding and one box cheesecake pudding with a small coolwhip mixed in. And a can of cherry pie filling with 1/4 cup cran-cherry juice and 1 tsp almond extract. Layer it in a trifle bowl and top with grated chocolate. SOOO yummy, but not exactly healthy. LOLOL.

I love to bake too. Today I made a "peaches & cream" cake. You bake a yellow layer cake in a 9x13 pan. While the cake is baking, cut up 4-6 fresh peaches and sprinkle with sugar-free peach jello. Sit aside in the fridge. In another bowl make a batch of sugar-free vanilla instant pudding.

When the cake is complete cooled, cut in 1" cubes (I just tear by hand) and place a layer of cake in a trifle bowl (or something similiar). Place a layer of the chilled peaches over the cake, followed by a layer of pudding and topped with light cool-whip. Repeat layers and place in the fridge to chill.

LOL. I just pulled my cake out of the oven and I'm waiting for it to cool to frost. I started feeling a little guilty so I came back onto SparkPeople and found this Baking Team. I LOVE to bake. Before my kids started school I was the baking queen. I baked every day, and made candy etc. My husband's work adored me. LOL. Then After I got 3 kids into school I just seemed to run out of time. I moved at the end of June and have found myself with no obligations other than my family. So I am baking once again. I just pulled out a triple layer cake. The top and bottom layers are chocolate, and the middle layer is banana, made with fresh bananas. And it will be frosted with peanut butter frosting. I tried some of the frosting and it's INSANELY good. Which is what I think started the whole guilt thing. LOL. So I will eat a piece of my cake, and I WON'T feel guilty, because I'll eat it in moderation (or so I say). LOL.

Welcome. Not to sure about how many healthy ones I have most of the time I will just substitute with splenda white and brown sugar and use whole wheat flour. I bake mostly "not too good for you goodies" -- for some reason they just taste better, but I like all the compliments from everyone. This for me is also a stress reliever!!! I could bake all day but always run out of something. Anyways I hope everything goes well for you and the recipes spark people have, alot of them are great.

Hi there!! I love to bake too, it's so relaxing. I am allergic to artificial sweeteners, but I do find that I can cut the sugar in half in most recipes without noticing too much difference, sometimes I add more fruit too - my baking goals are to find the healthiest way to make stuff still yummy (so like just how much fiber is too much lol it's a fine line).
Have you girls been to the sparkrecipes page? IT IS SO COOL!! you enter the ingredients and it figures out calories and all that PER serving!! How sweet is that!Anyways just wanted to say hi.

We are having a baby!
I'll be back on in 9 months :)

Anything and everything! I really like to bake cookies though because all the guys at my boyfriend's work will make a group call and thank me for them.

What kind of baking do you prefer? cookies, cakes, pies, breads or just whatever? do you make any candies?

Thanks for joining and I'm sure we can share lots of recipes. This year I've tried substituding the white and brown sugar in a recipe for the splenda sugar instead of the real thing and my kids still ate them and hardly noticed the difference. Then again I can make 2 batches of cookies and they are all gone within 1-2 days, thanks to my kids (and the big one too----my husband!!!LOL)take care, Jenn emoticon

I am so glad that you started this team! I love to bake. Most of the time I just bake for my boyfriend's co-workers and stay away from anything I make. Hope we can help each other out on how to bake some healthy stuff ( and not so healthy stuff )

I have always loved to bake. I bake all the time, I don't always eat it but there are times when I wish I didn't. My kids can polish off a cookie jar full of cookies within a day of making them. Even putting them in the freezer doesn't stop them!! LOL I bake so much especially at Christmas time that when we moved recently I had bought 2 stoves to bake with! I love them, that is if they were both hooked up!!LOL. Good luck to everyone out there with your goals! Jenn emoticon
