What I made yesterday didn't turn out the way I'd hoped, but it was still good. Made a "from box" orange cake and added some ground cloves to spice it up a bit. On the stove I had some fresh (frozen) raspberries and cooked in some lemon juice, water and tapioca to make a thicker type consistency. Put half the cake (or a bit more than half) in a bundt pan. Spooned in the raspberry mixture and then the rest of the cake mix. Cooked it per instructions. Took it out and flipped it over and took off the pan and most of my raspberry had sunk to bottom, so came out on top. I had wanted it to be a "surprise filling" type of thing, but it didn't turn out that way. I then took some of the leftover raspberry filling and mixed it with some powdered sugar, vanilla and nutmeg and drizzeled over the top. Its good, but not as pretty as I'd hoped.

If stress could burn fat, I'd be skinny and if chocolate could add brain cells, I'd be a genius!

I made these for Christmas. These are the real deal, with lots of actual rum, and other good stuff in them.


Traditional Rumballs:

Ingredients:

3 cups finely crushed vanilla or graham wafers (about 75 or so)
2 cups powdered sugar (icing sugar)
1 cup finely chopped pecans or walnuts
1/4 cup cocoa powder
1/2 cup rum (or brandy if you wish to make brandy balls)
1/4 cup light corn syrup
granulated sugar or sprinkles to decorate them

Directions:

In a fairly large bowl, mix the cookie crumbs, cocoa powder, chopped nuts, and powdered sugar. Try to mix it so all the dry ingredients are mixed evenly.

In a measuring cup, mix the corn syrup and rum.
Stir the rum mixture into the dry cookie crumb mixture. Using your hands, kneed the mixture well, until it is evenly blended. (If the mixture seems too dry, add 1 or 2 tablespoons of rum.)

In a small dish, place some coloured granulated sugar sprinkles (regular granulated sugar works as well) Set this aside.

Using your hands, pinch off enough of the mixture to form 1" balls. Roll in your palms to form a nice even shaped ball. Form all the balls.

Dampen your palms, and re-roll the balls a little to make them slightly tacky, then roll them in the sugar sprinkles. Do a few this way at a time, so as not to have them dry out before rolling them in the sprinkles. As you decorate them, place the finished ones onto a clean baking sheet for a few minutes to set.

Store these in a container with a good tight lid. Place waxed paper or plastic wrap between the layers or rumballs. These keep well in the fridge or a cool place for a few weeks. It is best if they are made a few days before you want to serve them.

Been a bit since I been here. I have been getting help baking. I helped my oldest make Banana Cake about 3 weeks ago. We ended with 2 cakes. The oldest served part of her cake to her class, the other one was to be shared with the youngest' class but she forgot. We ate 1/2 and froze the rest, because of Christmas.

For Christmas, I made Pumpkin Pie and Pumpkin Knot Rolls.

The last day of work I brought home almost 2 kg Cream Cheese. I made 2 cheesecakes. We only ate 1/2 of one and froze the other 1 1/2.

I think I might have a total on what I baked the past two weeks at work, for our Open House and Craft Night:

4 batches Sugar Cookies
4 batches Gingerbread Cookies
2 batches Gingersnap Cookies
60 Mini Buttertarts, using prepared shells, 5 batches filling
60 Pumpkin Tarts, using prepared shells, 2 batches filling
3 batches Date Squares
3 loaves Pumpkin Bread, was 4 but one hit the floor
4 batches Shortbread Cookies

Then I also did baking with 2 of the classes:

2 batches Sugar Cookies
3 batches Gingerbread Cookies

Then at home last Sunday, as I was feeling very behind on my personal baking, I did:

2 batches Shortbread Cookies
2 batches Gingerbread Cookies, including a small gingerbread house
1 batch Sugar Cookies
1 1/2 batches Fruitcake Drops
1 batch Candy Cane Cookies

Oh actually the Shortbread was a couple days before. The Fruitcake Drops are the only ones I did from start to finish on Sunday. Sunday night my oldest girl rolled and cut the Sugar Cookies, even helped bake them. Both girls rolled and cut the Gingerbread. Monday they shaped the Candy Cane Cookies with no help. And the girls and my son decorated the Sugar and Gingerbread Cookies by themselves on Tuesday. Monday and Tuesday I was busy trying to get some bead work done that I had planned to give everyone at school.

I am pooped out to say the least. The bead work was causing me stress because it was taking so long I had woke up 3 am twice to work on it. But everyone loved them.

6 loaves white bread and 4 loaves multi-grain bread on Sunday.

Then at work I mixed up 4 batches Sugar Cookies and 4 batches Gingerbread. I did bake a double batch of Sugar Cookies today, going to have to do the rest tomorrow and have a class come and help me do the Gingerbread Cookies tomorrow. We are going to freeze them and then next week instead of a Christmas Concert our school as opted to do a Christmas Craft Evening. The cookies are going to be for a craft center, we are going to decorate them.

For the Craft Evening, I am also baking Gingersnap Cookies (10 dozen), Shortbread Cookies (about 10 dozen), Pumpkin Bread, Carrot Cake and maybe do some Butter tarts.

Lately, at work I did another 7 dozen Pumpkin Chocolate Chip Muffins, I put those out for our Remembrance Day ceremony, only 6 came back to the kitchen.

Today I made 3 loaves Pear Bread, a recipe found on Pintrest. I was going to use Asian pears for this recipe but they were bad already, so I opened a jar of home canned Pears In Extra Light Cinnamon Syrup. They are cooling right now and smell yummy.

Today was Baking Day at work.

I made 4 dozen Pumpkin Chocolate Chip muffins.

Then I had a class come in and make Sugar Cookies, we ended up with about 141 cookies. They are going to serve them at our Remembrance Day Assembly on Friday.

Then I had some kids owe me some time so instead of staring at the walls I had them help me make Cheese Drop Biscuits. We ended up with 69. These are also for Friday. What was funny is they only owed me 5 & 10 minutes but they stayed until they were on the pans.

Sunday was Baking Day. I wasn't the only one baking, my middle child decided she was going to bake. I stood by and gave hints and tips, while she made Hot Milk Sponge Cake.

I baked a pound cake for my church.

I made my first batch of fudge about a week ago. I read the recipe for pumpkin fudge and had to run out and get the ingredients that day. Oh it was sooooo yummy. I ended up giving half to the neighbors so i wouldn't eat it all.

Oh and I taught a Gr 3-4 class how to bake Chocolate Chip Cookies, we ended up making almost 10 dozen.

I did a bunch of baking yesterday.

3 dozen Zucchini Muffins, 24 individual pot pies, 6 loaves white bread

I also did up 3 lg freezer bags Deep-Fried Zucchini Sticks, 1 pot Beef Stew (used to make the pot pies), 4 racks ribs.

From Keebler Graham Pie Crust emoticon

This is good and fast to make.

Cherry Dream Pie

3 egg yokes
1 can ( 14oz) sweetened condensed milk
1/3 cup lemon juice
1 Keebler Graham Pie Crust
1 can (21 oz) cherry pie filling

In medium bowl beat egg yokes. Stir in sweetened condensed milk and lemon juice. Pour into pie crust.
Bake at 325* for 25 minutes. Cool for 1 hour. Refrigerate at least 3 hours or until set.
Top with pie filling. Garnish as desired. Store in refrigerator.

After I cut the pie I then put a spoonful of pie filling on top of the pie I still had about half of the filling leftover.

Well the pie wasn't that bad tasting, the crust was a little soggy but not bad.

After a little break I had to get baking for back to school. I made 2 dozen & 7 Peach Muffins and have 6 loaves White Bread rising. I also baked up a Peach Up-Side Down Cake for dessert tonight. Do you detect a peach theme? I got a case of peaches from the farmer's market and need to use them up.

I screwed up my Glazed Strawberry Pie. The crust must have had a whole or two in it and the glaze went under the crust. Next time I have to remember to make a full crust recipe as the half crust is just too thin, because when I normally make double crust pies I use 2/3 the recipe for the bottom crust.

I have made Blueberry Buckle (8" round pan), Chocolate Chip Cookies,(1 batch from the back of the chocolate chip bag about 4 dozen) (10 went towards Ice Cream Sandwiches), and today was bread baking day, I made 12 loaves and then 1 sheet pan BBQ Chicken Pizza for lunch and the other half went to the freezer.
