I couldn't find an old thread, so use this one to share recipes you think others might like.

I came up with this one just thinking ahead to what I have on hand at home:

Easy-Peasy Walnut Chicken Salad


2 c. of bagged salad
1 oz. walnuts (14 halves)
1/2 apple
1/2 orange
3 oz. diced chicken breast
2 tbs. fat free raspberry vinaigrette
1 small box of raisins

Nutritional Info
Fat: 21.5g
Carbohydrates: 74.8g
Protein: 27.7g

Pretty self explanatory: start with a bed of the bagged salad. Cut up apple and orange (and chicken, if applicable). Add apple, orange, chicken breast, and raisins to the top of the salad. Drizzle with raspberry dressing.

A great light meal to make for two people - just double everything and put half of each on a plate or in a bowl!
