One thing we always have is oreo dirt cake.
Recipe
1 pkg oreos (crushed)
1 pkg jello vanilla pudding(made as directed)
1 8 oz cool whip
2-3 tbsps cream cheese
Make pudding as directed, then add cool whip and cream cheese. Let set in refrigerator for about 10 minutes. Crush oreos and then layer the pudding mixture and the crushed oreos.

Recipe made over
1 pkg reduced fat oreos
1 pkg jello fat free sugar free vanilla pudding
1 8 oz cool whip free
2 tbsps fat free cream cheese

Make pudding with skim milk, then add cool whip free and fat free cream cheese. Let set in fridge. Crush reduced fat oreos and then layer the pudding mixture and oreos.

I actually made this recipe make over and it turned out great. No one could even tell the difference!!

Dutch Apple Pie

Put a single pie crust into pie pan.
Pare and thinly slice 5 or 6 apples, and mix with 1 c white sugar and cinnamon to taste. Let sit while you make topping.

Topping:
1 c flour
1/2 c brown sugar
1/2 c butter

If apples are not juicy, add a little water. Use pastry blender to mix crust items til crumbly, then spinkle over the apples. Bake 40 minutes at 350*.


Remake:

Dutch Apple Pie

Make a single pie crust subbing coconut oil for the shortening.

Filling:
6 to 8 apples, sliced and peeled
1/3 c honey
2 tbsp cornstarch
1 tsp cinnamon
dash salt

Combine the honey, cornstarch, cinnamon and salt, then stir in the apples til well coated. Let sit while you prepare topping.

Topping:
1/2 c flour
1/4 c brown sugar
1/4 c butter


Bake at 350* for 45 minutes to an hour.

Well it is Nov and I was looking at recipes .. so .. it is a favorite and I needed to make it healthier anyway ...

Twice Baked Potatoes:

Original Recipe:
4 Med baking potatoes
4 oz cream cheese, softened
2 - 3 Tbls snipped chives
1/4 tsp basil
pinch salt
pepper to taste
3 - 4 Tbls cream

Reduced fat recipe:
4 med baking potatoes
4 oz low or no fat cream cheese, softened
2 - 3 Tbls snipped chives
1/2 tsp basil
pinch sea salt
Pepper to taste
4 Tbls skim milk

Bake potatoes, cool and scoop out flesh. Add cream cheese, chives, basil, salt and pepper. Beat just until smooth, adding cream/milk 1 Tbls at a time, beating until mixture is fluffy. Spoon or pipe into skins. Bake at 375F covered loosely for 10 min, uncovered 10 min.

I pipe the mixture back into the shells, using my pastry set .. making real purty!! lol .. and sprinkle fresh parsley on top when serving!
