I've got a recipe for homemade tomato soup that we all really like:

Saute 2 onions chopped fine in 1 Tbls canola oil. Add finely minced garlic (2 - 4 cloves to taste). Add a bit of water to make sure the garlic doesn't stick! When the onions and garlic are translucent add a 28 oz can of stewed tomatoes, 3 cups chicken stock, 1/4 cup tomato paste. Salt and pepper to taste. Simmer 15 min or until slightly thickened. You can serve as is or puree some or all of it. I add fresh parsley on top when I have it.

Option 1: Add 1/2 tsp cumin and 1/4 red pepper flakes, garnish with cilantro.

Option 2: Add 1/2 tsp dried basil, 1/2 tsp oregano and garnish with curly parsley or fresh basil leaves.

I was also thinking I'd need 3 cans of beans next time instead of two, also.

I added a little milk to the tomato soup I made the other day. Also some spaghetti squash; quite good! I've invented a new soup! emoticon

lol Tina, try pulling about a 1/4 cup of the beans out and pureeing them, then putting them back in. That will make the soup creamier without additional fat!

Tonight I made a white chili, meaning white beans and chicken. Pretty good! Ds prefers his friend's mom's version with sour cream and heavy cream in it. Too heavy for me! emoticon

Well, yesterday was tomato soup from Allrecipes.com. It had 5 stars, but I'm going to try adding some milk to it today. The kids are used to half milk/half water with the Campbell's. :) I didn't think it was bad. Needs some more spice tho...

I have to avoid it for dh and for ds. The doctor's been monitoring my oldest for a couple years now. I don't really consider 134/56 or so high, but I guess they're using lower numbers these days...

Yes, I used the ranch dressing mix. I think it was called the Spicy Taco Soup, but it's in the left margin with the top 10 recipes. I did use the low-sodium taco seasoning, though. Of course, every time I get to exercising regularly, my blood pressure starts going kinda low (in my opinion), so I could probably use the extra sodium, lol.

I'm going to add the taco soup as a regular at our house. Did you do the one with the ranch dressing? I used a different recipe to keep the sodium down.

Tonight we had black bean and rice soup. The crushed tomatoes disappeared, but I took lots of carrots. :)
My youngest said it looked disgusting, but tasted good! It was a hit with the kids. I'll have to make it for lunch next time.

I love bean soups. I make lentil soup that is souper easy! lol ..

Lentil Soup

1 or 2 tablespoons olive oil
1 onion, diced
2 carrots, diced
2 cloves garlic, minced
1/2 lb dry red or yellow lentils (any lentils will work .. just check doneness since some are thicker than others!)
6 cups chicken stock (we make our own, water works too)
1 bay leaf

Rinse the lentils in water, removing any debris. Saute the onion and carrots in olive oil in a large pan over medium heat, until the vegetables have started to soften, then add the garlic.
Add the lentils, bay leaf, and water to the pot. Simmer over low-medium heat for 20-30 minutes, until lentils are softened.
Serves 4.

If you like your soup thicker you can take a 1/2 cup of lentils out and mash them, then return them to the soup. Mash more if you want it even thicker.

This time of year I love pumpkin soup! I'm an experimental cook, so I usually just throw in ingredients without measuring, but I found this recipe that is pretty close to what I make.


Simple Pumpkin Soup

1/2 cup onion
3 tbsp. butter
2 cups mashed cooked pumpkin
1 tsp. salt
1 tbsp. sugar
1/4 tsp. nutmeg
1/4 tsp. ground pepper
3 cups chicken broth
1/2 cup half and half or fat free half and half.

Chop the onions and gently brown with butter in a pan. Put mashed pumpkin
with onions in pan. Add the salt, sugar, nutmeg and pepper. Slowly add chicken
broth and heat thoroughly, but do not boil. To serve, pour into a tureen and
add the cream. Makes 4 to 6 small servings



Note: I don't use sugar or cream in mine and I use a tiny bit of olive oil instead of butter.

I haven't ever frozen eggplants, so I am not sure... I'd just hurry & chunk them up and add them to any Italian dish. They look ugly, but you really can't taste them that much... At least, I can't. My daughter says they are her favorite veggie, so she must taste something I don't. :)

One really yummy recipe for them is cutting them in thin slices, and using them for "lasagne noodles" in a veggie lasagne. We replaced the ricotta cheese with cottage cheese & egg that I blended in a blender, and added Italian spices to... layer that, the eggplant, and your favorite sauce until you reach the top... then, sprinkle parmesan & mozzerella to the top... it is low calorie & yummy... (i believe Sparkrecipes has a few you could choose from so you'd know the calories.)

As for soups first, I usually just make huge pots of soup for dinner and eat 2 servings, and make a batch of dinner rolls or cornbread in muffin tins... I freeze the leftovers and will pull out 4 every time we eat, and put them in the oven for about 10 minutes on 350, and they taste freshly baked. emoticon
The next day, I usually eat soup as dinner or a snack.I had the great idea of canning leftovers, but read up on it, and I do not have a pressure canner... and I have a glasstop stove. Supposedly, you cannot use a PC with a GT stove, as it has an auto timer that will not heat the PC up high enough to kill Listeria and other bacteria! Bummer, because one of my plans for Christmas was to make my dad a bunch of jars of soup... he loves soup, and my mom is a nurse, so she is gone a lot...

Taco soup was a good one this week. We'll make that again!

I'm thinking some lighter soups as a first course might help us all eat less and save some grocery money... Anyone do that?

Hey! I grew some eggplant this year, and got 15 small eggplant on one plant! Had no idea one plant could grow that many!

My question--can you freeze eggplant? I have another 6 of the little things, and I didn't want to cook them right away.

This is savory & yummy. We grow squash & eggplants and I got overrun, so this is a yummy way to use them. I'll probably make this once a week. I really liked it. I added a bit more salt and some parmesan cheese to the top. Yum.

Low calorie, and filling when you need a "snack".

I also like to make soups with potato chunks... and the next day, take the leftovers and put them in a blender for a creamy potato soup. That way, you can have 2 different "meals" with a small little change. our favorite is chicken, potatoes & veggies like broccoli & carrots or winter squash.

Another way to discover soups is by country... for Mexican add spices, broth, beans, tomatoes and corn for a zesty flavor. Top with a dollop of yogurt & avocado... serve over tortilla chips, if you want.

For italian, use summer squash, green beans, carrots, tomatoes, and a few pasta shells with Italian Spices & salt. Add a little parmesan ontop when you're done. Yum.

Soups are pretty easy. I usually toss stuff that sounds good into a pot and cook. Have fun! Just make sure to write down what you put in it... I have made many a pot of soup where I have no recipe for it, and I always wish I did... (You can also tweak recipes this way, too.)

Now that it's getting chilly out, I'd like to try and make one or two new soups a week for lunchtime. Don't like to try new one's on dh. lol

Today we tried Avgolemono--Greek lemon rice soup. The younger two weren't crazy about the lemon, but they ate it. Oldest and I thought it was pretty good.
