I took the dish below to a potluck on Saturday. One family like it so well I sent the leftovers home with them. The mom just called to ask for the recipe because her teenaged boys asked for more.

Although I was introduced to this as a snack, it's actually pretty versatile. It could be wrapped in a tortilla, or served with or over rice or a baked potato or mixed greens. As written it is high in salt but that can be controlled by using home-cooked beans and frozen corn instead of canned.

Easy to fix, easy to keep the ingredients on hand, easy to eat....

Santa Fe Salsa:

The original recipe: Rinse and drain one 15 oz can black beans and one 15 oz can whole kernel corn. Mix with one cup of your favorite salsa. Serve in individual bowls with tortilla chips for dipping.

As I served it Saturday:
4 - 15 oz cans black beans
1 - 15 oz can whole kernel corn (you use what you have!)
3 cups Pace Picante Sauce - Mild
a very liberal sprinkle of True Lime (dehydrated lime juice) -- 2 to 3 tbs.

Whole foods wrap

With beans and rice (or other grain) in the refrigerator, and a microwave, this is quick and healthy.

Basic:
1 burrito-size whole grain tortilla, heated in microwave (10-12 seconds)
(I'm sorry -- this is one of my compromises. I can't stand the aftertaste of the fat-free tortillas I've tried.)

3/4 cup whole grain, warmed
1/2 cup cooked beans, lentils, etc., warmed
3/4 cup chopped romaine
1/4 - 1/3 cup salsa, tomato sauce, fat free salad dressing, etc.

Stack ingredients along a line roughly in the middle, top to bottom, and leaving 1/3 of the tortilla clear to one side. Fold that side over the filling. Fold the top and bottom over, creating an open-ended tube. Enjoy.

Alternate: Greek
1 cup chopped romaine
1/2 c chopped green pepper
1/2 c chopped cucumber
1/2 c tomato wedges
fresh lemon juice to taste
freshly ground pepper
Greek olives, if your health and calorie allowance permit

Beans and toast

Toast some whole grain bread. Top with some canned kidney beans with a little of the juice. Doctor it with ketchup, soy sauce, Tabasco(tm), whatever. Serve with carrot sticks, an apple or some other raw produce on the side.

Unless I'm using leftover beans that have been refrigerated I don't even heat the beans. If they are chilled I pop them in the microwave.

This also works with canned baked beans, but they tend to have added sugar. My favorite brand is Bush's Best (original). I discard the pork. (I'm not vegetarian purist.) Their vegetarian beans contain tomato sauce. I'm from the northeast. Tomato sauce does not belong in baked beans!

I first saw that phrase used in an article here on Spark People. From the context I decided it means the meal you know you always have the ingredients for, that's fast, easy and healthy, that when you're standing in front of the refrigerator clueless you say, "Ah! I'll have my go to meal."

So, this thread is for us to post our quick, easy, mindless, healthy, whole foods go to meals.
