I like brown rice, chopped nuts, raisins, cinnamon and almond milk. During this cold weather I serve it warm. My little grandchildren love it, too!

Oh! Avocado, Sriracha chili sauce, and nutritional yeast!

I had chickpea, green pea, Brussels sprout, and potato curry for breakfast. The sauce was mainly leftover carrot pulp from juicing, a little tomato, and a splash of soy milk to finish.

Thanks for so many great breakfast/lunch ideas. Rheyn, you mentioned avo, siracha, and mooch. I'm not familiar with these. I'm going to have to look them up and see if our health food store carries them.

What a great thread! I am definitely going to try some of your ideas.

Yesterday I made a batch of McDougall Diet porridge: 1/2 cut oats, 1/4 cup barley, 1/4 cup brown rice and 4 cups water. Added a few shakes of Nutmeg, Mace and Cinnamon. Cooked for 40 min. I serve myself 1 cup heated in the microwave. I did add 1 tsp of sugar. Store the rest in the frig.

Hi Rheyn,

Sometimes I do recycle beans from dinner, but I also buy beans specifically for my breakfast. Eating traditional dinner food for my breakfast is fairly commonplace with me. They're sooo delicious.

Oh boy, I've really been on this big tangerine kick lately. I've been eating more and more of them. I eat them whole, but I also have been making a fruit drink/smoothie in my blender with pineapple Splenda, a few mint leaves, and ice cubes. Oh my goodness, it's delicious. I drink that with a serving of dates with peanut butter spread on top of them and I have a nice fulfilling breakfast.

Banana Blueberry Crustless Pie

1/2 banana sliced
1 cup frozen blueberries
1/4 c. old fashioned rolled oats
1 T ground flax
1/4 c. pomegranate juice (or reconstituted juice)
dash nutmeg
dash cinnamon

Mix and microwave 1 minute. Stir.
Microwave 2 more minutes.
Allow to cool slightly. It's very hot!

The juice that is released thickens and this turns out like a blueberry pie.
If you want it sweeter and have the calories available, add a tablespoon golden raisins or dried cherries to the juice and microwave 30 seconds before adding to the fruit/oat/flax mix

Micro Apple/blackberries/cherries/walnut (romaine and spring mix) salad (no dressing, no vinegar very tasty) a real whole foods breakfast

Note: for me, a micro salad is put into a processor and pulsed until small pieces, like 1/4 - 1/2 inch. The pieces are still recognizable and still require chewing. If I'm adding vinegars or a dressing, I add it just before 1 final pulse. You don't want it all liquid. That would be called a blended salad or a smoothie.

Nutriblast: frozen banana, strawberries, cherries, flax seed, romaine lettuce, water
Delicious.

Nutriblast is a smoothie made in the Nutribullet with greens, fruit, and a "power up" which in this case was the flax seed. Then extracted in water, usually, but also milk alternatives like almond, hemp, soy, or coconut milk beverage.

I have fallen in love with sprouted grain English muffins. So I often have a half spread with almond butter or natural peanut butter. Then a couple of fruits in a bowl and tea finish this out. Super easy. Super delicious.

This morning the fruit was California cherries and Florida cantaloupe, both perfectly ripe. How do they do that?

I don't usually have much time in the morning so I spread some roasted almond butter on some whole wheat bread and add some pepper jelly or blackberry jam. If I have time, might toast the bread first. A cup of black coffee, too! Delicious and easy!

Like Katrina I like an egg for breakfast as the protein stays with me all morning. I add to this a slice of whatever kind of homemade bread I currently have on hand and put a little real butter on it as I suspect the substitutes are worse for us than the real thing! I us a very small amount though like a teaspoon on a piece of toast. Then I have 6 oz of 2% milk with Nestles Quik. I know this won't sound like a healthy breakfast to some of you but it works for me although I also like Oatmeal for breakfast or sometimes potatoes with onions and some form of protein browned in a little olive oil. For the amount I eat, I actually need the extra calories I get from the butter or oil and we all need some fat in our diets to transport the fat soluble vitamins like vitamin A.

My other favorite super speedy and simple "power breakfast" is Banana in a Snuggie: spread a whole grain tortilla (or other wrap) with nut butter (I've been mixing up my own combo of dark roasted peanut flour with a little maple syrup and a pinch of salt), and roll it around a banana. I also like to sprinkle on some nutritional yeast, but to me, the stuff's a close second to avocado in the "goes with everything" department, so maybe you can't trust my recommendation.

My favorite store-bought option is Ezekiel bread, but whatever homemade bread we have at the moment is great. IMHO, avocado goes with everything, so even though I don't specifically remember ever having had it on cinnamon raisin bread, I have no reason to think it wouldn't be good, too. (I've definitely had avo and sweet BBQ sauce together, so why not?)

Also, Will, I just had dinner, but I still want to eat your sandwich.

Apple pie Smoothie: In a high speed blender like a Nutribullet place:

handful of chopped romaine or angel hair cabbage (about a cup, or 1/2 the large cup)
1 chopped apple
1/2 frozen banana
20 g. Trader Joe's dried cranberries- These have no sugar added, but are coated with cranberry oil. (substitute a small amount of any dried fruit like raisins or cherries or frozen fruit like raspberries or blueberries)
1 thin slice ginger
1/4 t. cinnamon
14 - 28 g. walnuts (almonds can be substituted, but I prefer the walnuts)
Add water to the fill line (about a cup)
Process about 1 minute.

If you're carrying this on an early morning workout or even to work, pour into a ToGo mug with some ice. Yummm!!

I sometimes eat this with 1/2 sprouted grain English Muffin spread with almond butter. If I do that, I use only 14 g. or 1/2 serving of walnuts.

An article I read yesterday said that many (or most) people avoid eating foods that are considered "healthy" because they think they have no taste, or taste horrible with no thought to the possibility that it just might taste good.

With whole foods, I think we have the added strike against us because of the idea that they are not convenient, take too long to prepare, and on and on.

So, share your favorite whole foods breakfasts here.

Challenge rules:
1. All ingredients must be whole foods
2. You must rate the dish as delicious
3. It must be quick to prepare OR easy to carry on an early morning run and eat as the sun comes up.
