John McDougall is a very good recourse but I'd also advocate anything by Andrew Weil he shows you the entire picture from macromolecules to nutrition

The Omnivore's Dilemma, by Michael Pollan. it's what prompted me to re-explore going vegan.

The book "Eat to Live" by Dr. Fuhrman

the blog "Fatfree Vegan Kitchen" at blog.fatfreevegan.com/ and the site fatfreevegan.com/ have many good recipes that match the Eat to Live and the Dr. McDougall plans.

i'll have to find the book to find out who wrote it. it's called "Becoming Vegan." it just gives the basics of health. i'm not sure if this one counts, but i have marilu henner's "Total Health Makeover." she gives a lot of compelling arguments for a healthier approach to eating.

Any of the pH Miracle books by Robert O. Young and his wife Shelley Redford Young.

The pH Miracle
The pH Miracle for Diabetes
The pH Miracle for Weight Loss

all promote the same food plan, and I recommend reading The pH Miracle first, because a lot of the science of it is skimmed in the more 'focused' Diabetes and Weight Loss books.

The McDougall Plan
The McDougall Program: 12 Days to Dynamic Health ***
The McDougall Program for Maximum Weight Loss
The McDougall Program for a Healthy Heart

The New McDougall Cookbook
The McDougall Quick and Easy Cookbook

*** Although not his newest book, "12 Days" is my favorite to give someone just starting out.

I see this as an ongoing repository of books and other resources that provide the scientific, ethical or other support for why we choose to eat this way, and that document its safety and benefits.

I intend to create a separate thread for current research reports.
