I like a simple salad of cut up cucumbers and tomatoes and toss with low fat mayo. Can also add whatever veggies you feel like such as green pepper, radishes, and I've even diced up a little potato and it's all good!

The Dacha salad sounds so yummy. I have been trying to add radishes back into the diet but sometimes they are just too strong.

Both sound so good! I really don't have a recipe but my MIL makes this every summer and now I do too.

Dacha Salad
8 medium radishes,chopped
1/2 cup chopped parsley
1/2 cup chopped dill
1/4 cup green onions,chopped
3 tomatoes,chopped
I cucumber,peeled and chopped
Sunflower oil
vinegar
or sour cream for the dressing
Salt and pepper to taste
This is a very popular Russian summer salad. You can adjust the amount of parsley and dill to suit your taste. I usually use a little less.

This is my favorite whole food recipe. I LOVE this.


Quinoa Salad
Ingredients:
3 cups vegetable broth
1 cup water
1 1/2 cups raw whole grain quinoa
1 cucumber, sliced
1/2 red bell pepper, diced
1/2 yellow bell pepper,
1/2 cup lightly steamed broccoli florets
2 tomatoes, chopped up very fine
1/4 cup extra virgin olive oil
1/3 cup lemon juice
2 tablespoons rice vinegar
3 cloves garlic, minced
salt and pepper, to taste

Cook quinoa in vegetable broth and water.
As the quinoa is cooking, mix together lemon juice, olive oil, garlic cloves and salt and pepper.
When quinoa is finished cooking, allow to cool slightly then, toss with vegetables and lemon juice and vinegar, stirring to combine well. Chill before serving.
