This is my favorite whole food recipe. I LOVE this.
3 cups vegetable broth
1 cup water
1 1/2 cups raw whole grain quinoa
1 cucumber, sliced
1/2 red bell pepper, diced
1/2 yellow bell pepper,
1/2 cup lightly steamed broccoli florets
2 tomatoes, chopped up very fine
1/4 cup extra virgin olive oil
1/3 cup lemon juice
2 tablespoons rice vinegar
3 cloves garlic, minced
salt and pepper, to taste
Cook quinoa in vegetable broth and water.
As the quinoa is cooking, mix together lemon juice, olive oil, garlic cloves and salt and pepper.
When quinoa is finished cooking, allow to cool slightly then, toss with vegetables and lemon juice and vinegar, stirring to combine well. Chill before serving.
