Mo - here's a couple of pumpkin brownie recipes. I have not tried either one. But they're examples to give you an idea of what it is replacing (in this case probably eggs, oil and some liquid). Depending on the recipe and which one you put in, using things like pumpkin, squash, applesauce, beans will add fiber; reduce or eliminate the need for fat and/or eggs to get the same or similar texture; is the glue in gluten free; and reduces the need for sweeteners (applesauce, pumpkin, other sweets).

I like certain vegies raw & other vegies cooked. Like carrots...I do not like them raw. But cooked I will eat them all day long. I can do broccoli either way but I prefer it cooked.

Now um...adding pumpkin to baked goods??? The only baked good I have ever "added" pumpkin to is a PUMPKIN pie...so I'm really getting confused here!!!

Cooked or Raw both are swallow.

I know how it sounds Mo. I'm a bean lover and I HAD to try it because it sounded so weird. But, in baked goods you can't even tell that white beans are in there taste-wise. Texture is about the same as adding pumpkin, it's denser. It's good for gluten free baking.

OK FUNFITFREEDOM doesn't know this about me yet...but I am NOT a bean lover. Now don't get me wrong...I genuinely WANT to be. But beans are kinda sorta icky. Taste wise as well as texture wise. So the thought of putting a BEAN in a BAKED GOOD has me completely & totally freaked out right now & I'm making the duck face. LOL! But I am SO proud of you girls for eating nice healthy fiber rich beans. emoticon

First thought when reading your post question on black beans was "black bean brownies" reminding me that I haven't made them yet.
White bean cakes, sweet breads, and cookie bars recipes from various blogs and recipe/cooking sites I've baked all tasted normal since white beans are basically flavorless. So it bumps up the fiber content and lowers calories, the amount of fat & refined flour without sacrificing the flavor. Con: not for delicate light & flaky pastry recipes.

Swallow. LOVE cuban style black beans with lots of fresh garlic. That's the only way I've had them other than in salsa and chili when I lived in Santa Fe.

What about white beans hidden in recipes like baked goodies?

I pretty much would swallow everything mentioned except for fish unless it's fried. Sardines only if super small, packed in veg broth and there's lots of crackers and cheese to eat with them. I've never eaten game so can't comment on those.

Here's a recipe for a tasty cauliflower pizza crust that can be used for flat bread for the request for cauliflower recipes. I also chop or mash it and add it into all sorts of things. If you cook it no more than 10 minutes that bitter sulfur flavor does not have time to develop and then it tastes like whatever you put it in.

I have to say...I am a fish hater. I wont eat fresh or seafood, shellfish, none of it. I just don't like it. I eat mostly chicken.

I don't know what to say to a fish hater. Do you hate mild, delicious flaky white fish? Do you hate steak like meaty tuna & sword fish? Do you hate full of Omega 3s & so amazingly healthy salmon?

Shrimp is good & good for you. You just have to be aware of where it came from & if you have high cholesterol be aware that you have to eat shrimp in MODERATION & of course avoid shrimp if you have gout which will be aggravated by these tasty fellows.

Oh Myyyyyyyyy...you just hit on one of my absolute favorites. Fried Green Tomatoes. YUMMM! LOVE them!!! When done well...can't get enough of them. That might now be one of my goals...to learn how to make them this year! YUM!!!

OK Ginger...we need to upgrade your vegetable tolerance. :) You don't have to cook collards (or any greens) like your Mama did or your Grandma either. Greens are so so SO good for us...with vitamins & nutrients & even iron. Have you ever made kale chips? Might be a fun place to start! :)

Chicken & dumplings for me depends very much on who made them. LOLOLOLOLOL!!!

Let's take this a small step away...name a food you used to hate but now you tolerate/like/love/embrace.

Brussel Sprouts for me. Growing up never liked these...but I had them roasted & they are YUMMY!!!

Oh Green bean casserole is a SWALLOW for me. It's only once/twice a year so I don't feel guilty. I LOVE casserole type things to begin with & I just LOVE the flavors of this one.

I've responded to most of these. But Sour Candies such as Sour patch kids are a SWALLOW!!! I must have something going on that I just enjoy BIG flavors. Dark chocolate...sour candies...lemons...grapefruit.

Okay.... there's quite a list for me to reply today.

White wine - we purchased a wine kit with white Zifendel (??), and it's a blueberry pomegranate flavour. It's not easy to stay out of it.

Veggie Burgers - swallow, but only certain kinds. Some are just gross.

Hard fruit -- apples are my favourite by far, especially gala.

Dark chocolate - *sigh* dribble as I slowly spit it out. I try, but milk chocolate is, by far, my favourite.

Jicama - swallow. Cook it like a turnip by peeling the outside, chopping up into small chunks and boiling it. I can't remember if steaming is an option since it's such a dense veggie. Baking it until cooked is good too.

Cabbage - swallow, but not more than twice a week. I can't handle that much gas in the intestines.

Candy corn - spit (HOORAY!!!!)

Turkey - Dark meat and skin when warm, white meat when cold. Yes, I'm weird.

Carrots - swallow. Try roasting them in the oven with some parsley. I'm sure there's a recipe for that in SparkRecipes.

I work at Cracker Barrel and our carrots are amazing LOL cooked with butter and some sugar though :/ I haven't played around with cooking carrots too much although I want to also. Hopefully someone else has some ideas I'm interested in learning too.

I'm in VA so pretty Southern too! Didn't know Southern folks ate corned beef. That's funny to me. I lived in Chicago until i was 14 & then we moved here.

For some reason I'm not a fan of the dark meat turkey but I also don't like when the white meat dries out too much. I have never actually had the fried turkey but I've heard such good things about it that I do want to try it. (True Confession for the day!)

Root beer is a swallow for me but I have a soda weekness. emoticon emoticon

OK...I need to learn to like carrots. I like them cooked but not so much raw. Anyone have any good carrot recipes???

Good morning! haha or early afternoon now I suppose :P My grandmother has always cooked the cabbage in that way I guess it's a southern thing. I'm in SC where are you? She'll add corned beef too and that's delicious with it although I suppose it isn't as healthy anymore after all of the additions LOL I've never made cabbage rolls myself so I'll have to try some new cabbage recipes that will lighten up my traditional southern cabbage ordeal.

I'll have to look up those videos. I'm so used to eating dark chocolate I don't remember ever making faces. My grandmother would use those semi-sweet chocolate like you were talking about to cook and bake with and they were always so good.

I did know that about candy corn although I didn't learn about it until last year so that revelation was rather belated for me as well haha and turkey...hmm...I like both white and dark meat when it comes to turkey but it depends on the preparation. I prefer dark when it's baked because the meat is more juicy but I do enjoy white mean deli sliced turkey too. My in-laws fry turkey here on Thanksgiving after injecting it with all sorts of different flavors. Again...kinda taking away the healthy aspect of the meat but it is SO good. I guess with moderation I'll be alright to eat some this year :P

Morning Mommy! LOL! I just had to say that!!! emoticon

OK...I have never had cabbage cooked with bacon nor have I ever had it by itself over rice. both sound interesting but I think this Sunday I am going to put some cabbage rolls in the slow cooker. But I might do it the "cheat" way with chopped cabbage instead of actually rolling them up. I've seen some seriously YUMMY looking recipes for that online.

There's a little video on FB of kids eating dark chocolate for the first time & it actually brought back some childhood memories for me. My Mom used to cook and bake & she would have the semi-sweet chocolate & I remember eating it & making funny faces!!! And look at me now...in LOVE with dark chocolate.

Candy corn is a swallow. And again...have you seen on FB that if you stack CC on itself it actually looks like an ear of corn??? How did I not know this? LOL!

Turkey...are you white meat or dark meat? Or NO to turkey? LOL! emoticon

Yes! Honey crisps are my favorites too! A little pricey though :/ and I agree dark chocolate is the one and only for me I really don't like milk chocolate a whole lot unless it is a candy bar like a snickers or something.

I love cabbage! So yummy cooked with some bacon and eaten by itself or over a bed of rice :)

I have preferences in apples for sure. The honeycrisp have stolen my heart. But they have a VERY short growing season so my other love is Granny Smith. I'm sure I like some pears more than others as well but I usually eat the brownish green ones...bosc I think?

Dark chocolate is the ONLY chocolate as far as I am concerned...

It's good you found that and are watching it! Sugar spikes can really mess you up! I'm opposite actually even though I mentioned it, I don't like veggie burgers a whole lot although I will eat them, but I LOVE mushrooms and black beans :P

Hard fruits like pears and apples are a swallow but I do have preferences in the types of pears and apples I eat. Speaking of pears, apples and hard fruit I just bought a new fruit to try last night...a jicama..anyone try it before? It feels like a chunk of wood LOL but the label says it tastes like a pear/apple so I'm going to try it today and see if I'm a jicama eater.

First off let me say that I am totally on board with whiskey, tequila & all manner of girlie drinks. I am allergic to melon so I do avoid the watermelon pucker & things like that. I have also found recently (last 6 months) that drinking the alcohol (even with a meal) tends to really spike my blood sugar & makes me want to take an immediate nap. So I think I need to get the sugars under control before I go on any pub crawls.

Veggie burgers are surprisingly a swallow. And I don't like either mushrooms or black beans...so truly, truly surprising.

Sushi...swallow!!! EEL...SPIT. Whole different ball game.

Beer...i like to kiss people who have been drinking beer, but I don't like to drink it myself.

White wine...I like the SWEET ones (we are not surprised!!!). Riesling...Moscato...and an occasional Pinot Grigio. I really want to like Viognier b/c they make it in my state, but I'm not there yet.

Cranberries - Swallow, but not plain. I like them dried or gently simmered until they pop. We've made cranberry spread this way, so we can control the amount of sugar going in.

Beer - Spit. I can drink Vodka straight out of the bottle, but I can't handle beer. I love the smell, but can't stand the flavour. This isn't a bad thing. :-P

Sardines - meh... not really, but if they are mixed in with something, I won't pick it out.

Sushi - Spit right across the room and out the door! Apparently I have an issue with my fish being crunchy.

Well, I like the alcohol idea....

OK there's lots here.

I am actually gung ho for cauliflower. It's one of the foods I want to get back to. Relatively cheap. Super easy to prepare. Lots you can do with it. And cruciferous. LOL!

Cranberries are ok but I like mine jellied. Yeah...I'm a fat kid!!!

Isn't most dressing/stuffing bread based? Well then I am IN! As long as it isn't dry. But then ya know what...you put CRANBERRY SAUCE on it!!!

OK...I don't think we've ever asked this one...BEER.

Bread stuffing

Cauliflower will take on the flavour of whatever you cook it in, even if the smell (stink) lingers on. Try them "fully loaded" like you would a potato, shove 'em in the oven to bake first then add the toppings and broil it to melt everything.

OK...I don't eat yellow beans. Shudder. Green beans are totally a swallow. I don't steam them tho. We boil em for a minute or 3. Then either just a dab of butter or lemon. You can also cook them with a can of tomatoes for more vegies & more flavors.

I'm not a hunter. Bambi is safe around me. But I would be willing to try most things. I'm just not sure if I would personally be willing to COOK them. Somewhere in my memory bank I remember that if you soak deer/venison in MILK...it actually makes it less gamey.

You had me at PUMPKIN!!! emoticon emoticon SWOON!!!

Edited...Wraps are yummy. Wraps with too much tortilla & not enough filling are not. Wraps with iceberg lettuce are also not yummy.

Green beans - swallow, especially steamed. See Mo! I don't boil the snot out of everything I cook! :-P I also have a habit of calling these beans String Beans, whether green or yellow.

Ginger, Deer Hunting season is upon us in Canada. There is no lack of it around. Those who enjoy wild game, like deer, moose, bear, rabbit and bird, tend to keep the wild flavour in there. I can't stomach it at all. I've heard there are ways to cut back on the wild flavour, but since I don't have a close contact for a hunter, I don't get wild meat often at all.

Never had venison. I've had moose (swallow if mixed with a tomato sauce) and deer (holy yuck!! I can't get the wild taste out of it enough to think about chewing a piece!)

Bok Choi: swallow but only if it's been cooked 2-3 mins, max. (Ginger, most likely the restaurant overcooked it. Fancy doesn't mean they don't screw up sometimes.)

Kiwi: swallow, but I can't stand juices running down my hand and arms while I scoop out the green fruit. My blood pressure went up at the very thought of peeling/scooping one, even though they're really yummy.

Mushrooms: Swallow, but I'm picky. I try to only use bella's and avoid domestic white, because, like Ginger said, they tend to taste more like dirt. I'm wondering how well you wash them before eating if they have that much of a dirt flavour in them. I LOVE mine with sliced onions, S&P & a little butter on the stove or in tin foil packs.

Pimentos: I barely eat them out of olives. As in I've been known to spit them out in mid-chew. That's talent. And that's a spit.

Favourite apple variety: Gala or Royal Gala, followed closely by Honeycrisp and other hard sweet juicy apples. Soft ones like Macintosh or cortlands or red delicious feel wrong between my teeth and taste... off. But only when eaten raw. I love mac's in cooked apple dishes!

Favourite binge food (yes, I know, I'm not helping, but wandering minds would like to know what we're missing.)

I have to confess to being confused about this one. I like pimento cheese & I can eat olives with pimentoes in them...but do people eat pimentos all by themselves? If so...I would probably eat them.

I love fried mushrooms!! I like them cooked in things also. I do not like to eat then raw, they taste like dirt. I love kiwi but also do not eat it as much as I would like.

I LOVE me some kiwi & have absolutely NO idea why I don't eat it more. It probably goes along the line of all of the other fruit I should be eating but I don't.

Bok choy is a spit. I went to this really good (somewhat nicer) Chinese restaurant & even there it was stringy & tough & not yummy.

OK...I honestly don't like okra in any form. But a friend of mine who does like okra was in one of those "gourmet" grocery stores & she found basically okra that's been dehyrated or somehow made crunchy & they are actually GOOD. No, I didn't read the label I was simply going for taste. I can't find a link online, but I will update this when i do.

I have only recently discovered that I am not a huge fan of cold chicken. I'm also not a huge fan of the microwave. I'm too afraid of all the things we haven't figured out yet. Whatever. In the long run, I prefer my chicken warm but that guy who lives at my house LOVES to roll out a cold roasted chicken the 2nd day. So I calmly get my chiken & wander off to the mocrowave to do my thing. How was that for a long story that could have been one sentence??? emoticon

Blueberry anything is a swallow. Nut butters are sweet enough for me. Isn't that funny? I'm a peanut butter girl. My Mom didn't like peanuts so I never ate peanut butter anything until I was about 10 or 12 & realized that just b/c SHE didn't like something didn't mean I couldn't eat it. And we've been madly in love ever since.

Nut butters: Swallow.

I've had almond, peanut, and I think it was cashew or some other very whitish nut. Like you, Mo, I like sweets, so my nut butters need to have something to sweeten it a bit, like Stevia/Truvia or a bit of liquid sugar. I still have an unopened jar of almond butter that I've been meaning to sweeten with liquid Truvia, to see if I can get it to a taste level I like.

As with everything I'm more of a sweet girl...Gerkins & Bread & Butter are my faves.

I will eat a dill pickle, but it's not my go-to. I never crave them. And I am not putting peanut butter on them. Let's not talk about fried pickles either.

PEEPS are totally a swallow. The more the better!!! Then watch out for my sugar crash! BAM!

Wasabi is also a swallow. I don't mix it in my soy sauce. I use it sparingly on my sushi.

Indian food...no thank you! I had a bad introduction & can't seem to get past it.

Apple Cider Vinegar is supposed to do so many cool things NATURALLY and supposed to be SO good for you. I should learn to swallow...but not as of yet.

I was HOOKED on this vidalia onion dressing at one point, but I think I overdid it b/c even the sound of it now makes me a little urpy.

Balsamic Vinegar? And has anyone made their own? Do you like the regular ones or do you prefer a flavor? All these ripe tomatoes just cry out for some fresh mozz & some balsamic. I can live without the basil...but I'm willing to let it be on the plate. :)

Eggs -- add Benedict to the list, and I'll swallow them all. I love eggs. I could easily eat eggs for 2 of my 3 meals most days.

Mo, have you tried real meatloaf recipes? For years, I couldn't make meatloaf like Mom's. When I finally asked her about it, she said she always puts in some sort of carb to hold it all together -- sometimes it was crushed saltine crackers, sometimes it was leftover stale bread chopped small, and sometimes the almighty oats would make their appearance. My favourite is leftover bread, but I tend to have rolled oats more often than leftover bread. :-D Sometimes meatloaf is the only way I'll get any beef in that week.

Unless there are all kinds of vitamins & minerals & antioxidants that I can't get anywhere else I will pass on the celery root. I LOVE me some crunchy celery in my tuna fish, but I absolutely hate cooked celery!!! Green beans are a LOVE!!!

Swallow, but they have to be cool, not warm. And not a lot of them.

Celery root DOES taste like celery without the stringy texture. Like root veggies, peel the outside just enough to say it's peeled, then dice it up, drop it into some water or coconut milk or other flavoured water, boil till soft, and enjoy. I tried it raw, and it's actually a lot better than I was expecting. And I don't eat celery because of the texture.
