I offset my grocery shopping with specials from major drug stores in my neighborhood. I find cereal there two for the price of one. When they sell instant coffee at half price I stock up with 3 jars (enough to last until the next sale); recently I found a good brand of solid white tuna in water and bought five cans. I find this keeps my grocery shopping down. I have my groceries deliver once a month and in between go to other grocery stores and buy their specials. I also start my Christmas shopping as early as now and pick up nice items on sale. I have a spot to keep my presents and by Christmas time I have very little to buy and can focus on cleaning, cooking and delivery of presents. I buy my shoes on eBay and find expensive shoes at low prices. I take advantage of sales and find that I have more money left over. It takes some planning but I believe that the first portion of my salary is for my tithes and I thank the Lord when I find good sales and specials and always have everything I need. When I cook, I freeze leftovers to have a pre-cooked meal that I just need to pop in the microwave when I get home from work. Hope this helps.

Yes...stretching meat is just what I do too! I don't use a whole pound when it calls for it. I cut back and use veggies, or stuffing or something else to replace the meat.
I also wanted to mention that for a busy mom, a crock pot can be your best friend for making healthy dishes that don't cost much.
They even have some that come with a timer, so when you are at work, you can set it so it will turn itself on at what ever time you set and then when you come home and walk in through the door, the house is smelling so homey and dinner is just sitting there waiting for you. I would also reccommend a website that I enjoy using called: www.cooks.com
There are lots of great recipes posted by individuals here. If you have a certain ingredient and you don't know what to do with it...type it in and you will get a whole great list of recipes.

Another tip is that when you have leftover veggies, throw them into a tupperware container and freeze it. I add to mine all the time and we have a veggie beef soup on cold weekend days for lunch. A couple of cups of corn, carrots, beans, etc, 1/2 pound of ground beef, a container of low sodium tomato sauce, and a couple cups of water.

Also, when I cook up ground beef or turkey, I will take a few scoops of the meat and put it in a freezer container. A few meals worth of this equals enough meat for another meal! Walmart here has 2.25 pound packages of ground beef. I can stretch it to make 3 meals that call for 1 pound each.

Instead of relying on meat, add in more beans. A pound of pinto beans here is 1.32. Soak them overnight and cook them the next day with a bit of onion. I usually serve it with very thin slices of cornbread and whatever green veggies I have on hand.

First of all....Don't panic! Everything can be done gradually and I think in time you will find that it is not as expensive as you think.
What I would suggest is taking a look at just what you are spending your money on. What would be the first unhealthy thing you could eliminate. Just doing that will save you money.
Second...Start out by replacing one of your unhealthy meals with something healthy...example...how about a nice healthy soup made with fresh vegetables and broth...add a little rice, pasta or potatoes and you will have a very healthy filling dish that doesn't cost much at all. Soups always go a long way and there are so many variations of them. I have also purchased the roasted chicken and cut it up to use in soups, sandwiches, etc. That chicken can go a really long way.
Another way that can help is learning to steer away from the convenience foods...processed cookies, chips, etc. This may seem like a challenge with kids, but if it isn't done all at once, your kids will accept the change and it will be good for all of you.
Instead of processed snacks, why not cut up some apples or pack up some bananas?
How about baking your own home made cookies/snacks over the weekend with the kids. Get them involved in helping. They will enjoy the time with you and maybe even come up with their own healthy ideas. (I don't know their ages, but it doesn't matter...let them contribute). Baking your own cookies and snacks is a lot less expensive.
Fixing meals over the weekend can also help you out during the week when you don't feel that you have the time to do all that cooking.
Just start out slow and easy and before you know it...you will see that it's not as bad as you think.
I've also cut back on meats and found nice ways to make the meat stretch, for example...if you have a sausage, hot dog, something along that line...instead of giving each person one, why not cut it up into little pieces and incorporate it into your meal. You can use half as much meat and no one will be the wiser. It's a nice way to make the meat dishes stretch out.
These are just a few ideas...I hope they are helpful and I'm sure there are other great ideas out there too!

I don't have kids but I'm always strapped for cash. I've found it cheaper to buy a whole chicken instead of my favorite boneless/skinless/ckn breasts. Find a great roasting recipe and throw it in oven. Any leftover make a chkn salad sandwich or quesadillas. I'm also hoping to start my own garden in 2012...no experience but SP has many articles and advice so I'm really saving $ on fresh vege's next year.

Im a single mom of four kids who works a lot. Eating healthy is expensive. Any tips? Dont have grocery stores that double coupon... I gotta buy whats on sale but holy crap, its so much cheaper to eat a crapload of carbs and junk than it is to eat healthy. I need to lose weight and food is my biggest problem...
