Oh the stuffed tomatoes sound interesting. I might try that once I get more in the swing of eating them. Although I'm trying to figure out if I have the necessary skills to create a tomato flower.

I've heard that tomato sauce/juice is better than fresh tomato (that is if it is not packed with sodium,lol). The say that tomatoes are one of those veggies that doesn't lose nutrients during processing, but you get more of it in sauce form as opposed in fresh (they have lots of water in fresh ones). I prefer fresh, though. My favorite way to eat tomatoes is in my tomato cucumber salad,where I cut it up in small wages and slice cucumber and put little Olive oil and vinager over it (even though tomatoes don't need vinager,lol), and you can also put it in any sandwich you want. It brings freshness to everything, if I may say so myself.

for summer-ripe tomatoes only (the only time I eat them is in season.)

slice 1 tomato
slice 1 small part-skim mozzarella ball
clean a small bunch of fresh basil leaves

Layer these on a plate. Drizzle with 1-2 tsps olive oil and sprinkle with black pepper.

it's the best!

Those are really good ideas. The salsa especially since I don't like things that are too spicy. I've also thought about adding tomato to spaghetti sauce, but so far the idea that I'm liking the most is using it instead of sauce on an English muffin pizza. Does that sound healthy? Half an English muffin, a tomato slice, and some mozzarella?

I love eating the small grape tomatoes dipped in hummus (sun dried tomato or roasted red pepper flavors are my favorites). What about making some homemade salsa?

I never liked fresh tomatoes as a kid, but I always loved pasta sauce. You don't need to learn to love the fresh kind, so long as you eat pasta with a good sauce once a week! I start with canned/bottled sauce and then add other veggies -- including chopped canned tomatoes, fresh mushrooms, zucchini, artichoke hearts, or frozen "pepper stirfry", a combo of green, red, and yellow peppers and onions. Had it today with whole wheat pasta -- yum!! Make a big batch and it's good for 3 meals at least.

I have a nice little mental block about eating tomatoes which I would like to overcome, since one of my goals starting in May is to learn to love 1 new vegetable a week. I'd love any suggestions y'all have of good tomato recipes that are either healthy or something I can feed most of to my boyfriend after tasting.
