Taste. Absolutely and utterly. I would like to say "healthy" should come first, but from my past experiences, I know I won't eat stuff just because it's good for me. For instance, I love ice cream, but can't eat it all the time; so, I make that Banana Soft serve (frozen banana whirred in food processor with some cocoa powder, etc) recipe and enjoy it. It tastes close enough to the ice cream and it's healthy. Great question!

I start with healthy, and do what it takes to make it delicious. For example, I've created my own version of stuffed French toast with my own bread, organic fruit, Greek yogurt, and stevia which I have grown myself. I used to go to a local restaurant to get this. Their version wasn't healthy, period. Mine is, and it would win awards in sight and taste appeal. In August, I hope to make my own yogurt. I think I have learned the secret of making it so it isn't so strong. THEN I will strain it to make that delicious no-fat Greek yogurt. It has become a staple for me for so many things from dressings and savory sauces to dessert toppings. Store bought is delicious, but I'm not sure it is healthy for me.

Seasoning your vegetables sounds delicious - I also love to roast my veggies. The past year I haven't been able to eat meat at all. It tastes like sawdust in my mouth. I read the book "Eating Meat" can't remember the author and watched "Food Inc." so I've been much more careful about the food that I eat (most of the time).
I'm learning to try different spices and to cook with new & different foods.

I definitely go for taste first, but I cook healthy foods at home and my years as a chef have taught me how to make the simplest of ingredients shine with flavor.

If it's a special treat, I'll walk moderately and go for taste. Otherwise, I lean toward healthy choices first & foremost. Herbs and spices help tremendously. emoticon

I'd say taste first. Though I go for both now. Healthy food must taste good, or I'm not going to eat it.

I would have to say taste, but if I'm being completely honest, I must say that if I'm paying attention to taste and not just 'sugar, salt, fat', then meals which are made from real, fresh ingredients are generally tasty and healthy. And a bit of real sugar and butter are not a problem if you are careful with them.

Definitely taste first. I can fill my fridge with "healthy" food, but if it's not stuff I like I won't cook it and it goes to waste!

Both! I love bringing out the natural flavors of fresh vegetables by cooking/seasoning with course sea salt and fresh cracked pepper and fresh herbs (parsley, thyme, cilantro).

Usually most healthy foods taste really good because they are fresh, unprocessed and I cook with healthy herbs for wonderful flavor. But if I try to make a healthy recipe and it comes out nasty, I'll go back to regular version. I tried to make a chocolate mousse with tofu, complete failure. Nobody will ever convince me that it is better than the regular dairy version. Luckily most substitutions don't turn out tasting like that one. If you need a sweet dessert, it needs to satisfy your craving, healthy or not.

Most of your comfort foods can still be made healthful. I have reworked so many of my recipes and they have the same taste and sometimes better.

It depends how I feel at the time. If I'm feeling well, then its likely healthy. If I'm 'down', for whatever reason, then its comfort food.
