I needed to use the kale I bought two weeks ago so, lunch was a bean, kale, and bell pepper bake. Dinner was a cauliflower, garlic, kale bake. Both are very good!

Bean soup for lunch. Dinner was turkey, asparagus steamed, and a salad. My salad dressing was olive oil, lime juice, a garlic clove- minced, and pepper cracked on top. Maybe beans and asparagus were not good choices for the same day?

I fixed scrambled eggs (1 egg, 1 egg white) turkey bacon, and I baked fresh berry buttermilk scones for breakfast.

I had an orange as a snack while I worked on some sewing.

For dinner I had a 6 oz glass of red wine with a chicken and vegetable stir fry and brown rice, followed by a piece of the chocolate cream pie I made yesterday for valentines day. Stayed completely within my points too! Woo hoo! :)

Today is my first day sticking to real food again. First time--I lost 40 lbs in about three weeks. Time to get back on the straight and narrow.

Salad in a jar.
Layers from bottom up:
Homemade vinegarette, 2 TBS
Organic Celery, fine chopped
Organic Baby Carrots, cut lengthwise, matchstick.
Organic Radishes, sliced
Leftover Quinoa, 1/2 cup
More celery, just a little
Cashews, lightly salted, just a few.

I used old used jars that may have had pasta sauce in them. I like them for storing leftovers.
I tried this with plans to take some on our vacation in a couple weeks. Use Ball Jars if you have them.

For tomorrow, I have some more made with white beans.
I didn't order from the farm this week. Next week, we can go there and buy from their little store. They also have a hearty lettuce mix.

I had white bean and avocado wrap made with a cabbage slaw (no mayo) from a recipe I found a long time ago on Web MD. It was really great. It took some time to make as it had a lot of ingredients,but it is worth looking up for something fun and healthy. My meat eater husband liked it too. Although, I could not get my 12 yr old son to give it a try. Maybe next time.

In my CSA package...I got spaghetti squash...never had it before....so...after baking the squash, I scraped out the softened squash, added it to sauted onions, peppers and diced tomatoes....ohhhh yeaaaa!!! that was great!

God bless my son in Savannah...While I was there...he introduced me to real rice (not minute rice)...and it was so flavorful! also...not being a tea drinker..he took me to a tea room (not Lipton or Tazo) but Real tea...yea...I'm hooked...

I make my own spaghetti sauce. I am trying to cut down on purchasing food that is already prepared. I also cut down the amount of pasta that I use by adding spaghetti squash.

Today is my first day back on my healthy eating program. I had fruit smoothies with bananas, blueberries and nectarines. All organic of course.

I also made a wonderful green juice with lettuce, tomatoes, celery, garlic, carrots and cucumbers. Yummmo!

I did not consume all the food I made. I am very full and very tired right now. I am going to bed shortly.

The only super powers I want are Kindness, Gentleness, Patience and Peace of Mind.

Today, I sort of got adventurous for breakfast. I am a bacon and eggs kind of person, but I thought I'd try to be different. I ate a cut up peach with yogurt (blech!) and organic granola on top. I know this is a common "recipe", but I have never tried it. I liked it! It was pretty filling. I made it breakfast and what I couldn't finish, I ate for a snack. emoticon

I had my regular plain Greek yogart with fresh blueberries this morning for breakfast and for lunch I had a hardboiled egg on a rye crisp with some avacodo mash. It was really good. Hubby and I will be going to a meeting tonight so we will be eating out and I am not sure where he wants to go. I usually select from healty appitizers or salads in the evening

I started out top weight 245 but that was when I actually got on a scale. I was diagnosed with fibromyalgia almost 20 years ago. Lunch, a small salad of fresh spinach, cherry tomaotes, purple onion and walnuts with a homemade vinegerette dressing

Well, today is my birthday so I ate fruit for breakfast then a friend took me to lunch I had vegiatrian pea soup and a portabello panini sandwich. emoticon

Today I had a green smoothie,lentils and apples, home made flax crackers with homemade raw vegan cheese, and home made veggie chicken soup.

Breakfast today was leftover amaranth tabouleh and cold chicken.

Lunch is going to be a lettuce salad with pesto chicken and avocado, with a bit of olive oil and balsamic vinegar over the top.

Dinner will be a pan-cooked pork chop with braised leeks and carrots.

Tonight is the St Patrick's corned beef and cabbage, heavy on the cabbage. Corned beef is VERY fatty so 2 oz will suffice. I'll roast rather than boil the potatoes, though.

Late breakfast/early lunch - omelette with mushrooms, red onions, and leftover roasted guinea fowl

Snack - baked sweet potato with butter and a punch of ground nutmeg plus a few bites leftover guinea fowl

Just found this team and am having a ball looking at what you all are eating.

I'm stocked with broiled salmon and salmon fish cakes; yogurt and blueberries; apples (they got frozen so I'm going to have to cook them); grapefruit; mung bean sprouts. I think I'm going to make some tapioca pudding and pumpkin soup today. I am frustrated that I can't find whole grain Cream of Wheat at my grocery store any more.

I'm busy baking 'cause I expect my power to go out tonight and stay out for the rest of the weekend, so I wanna have food around that doesn't need to be refrigerated to store or heated to eat. That means dried fruit, breads, pie, citrus, and lots of water. I made cornbread with buckwheat flour last night (pretty crumbly without regular wheat in it) and ate it with lingonberries. I could live on just that for DAYS.

Feta spinach egg white loaf topped with sunflower seeds topped with salsa and ginger tea..
Kind of like spanikopita but less calories.

I try to eat local, but my CSA share of spinach was so small I ate it in one salad and I don't get more for two weeks, so yesterday I caved and bought raspberries, mango, and pineapple. That food has seen more of the world than I have, but it was delicious. I also had some green curry (I made it with homegrown mung bean sprouts, crimini mushrooms, canned mini corn, and tofu) over jasmine rice for lunch and a bagel with cream cheese for breakfast. It was a yummy day.

I want to change the list of what I ate today.
I wound up eating
Spanakopita without the dough, salsa, tea, 1/4 of a pear, banana, vegetarian chili over baby salad greens, vegetarian stuffed tomato and some more salsa, 25 calorie hot chocolate.

I love savory oatmeal for breakfast. I heat up my oats (which I make with vegetable broth) with some tomatoes (whole roasted tomatoes produced by the farmers from my CSA), 9 grams of 2% cheddar and one egg white.
I eat this almost every morning, and when I can spare the calories I add a poached egg or a half an avocado. Some mornings I add some baby spinach, too.
This probably sounds disgusting to the sweet oatmeal lovers but I do not like sweet breakfasts. Maybe a little maple syrup on weekends but that's it!
I use the steel cut oats. I buy the ones in the bins at Whole Foods -- one of the best bargains in the store.

Breakfast: oatmeal, with walnuts, blueberries, and a tbls. of organic pure maple syrup

Lunch: zucchini, squash, onions, mushrooms, cooked in extra virgin olive oil
1 boneless, skinless chicken thigh
raw salad with oil & vinegar

dinner: cod fish breaded in almond flour
broccoli
raw salad with oil & vinegar

am snack: apple with almond butter
pm snack hard boiled egg with raw veggie strips

I drink lots of green tea!

I alternate breakfasts with a Whey protein shake from Designs for Health and add chia seeds and ground flax seed, and use almond milk

This is pretty much what I eat all week, just changing up the vegetables, meat, and seafood, and fruits.
