The funny thing is I have learned that cooking from raw ingredients is easy, (when you know how). And cheaper (way) So now I cook from scratch with quality, often organic ingredients and spend no more and take less time. If you had told me that before I would not have believed you.
My family is LOVING the new things I have learned, my daughter said she hopes I go to cooking school next.
I get ideas form Nigella Lawson often. She often cooks for just herself so she might be great for you cooking for one. I like her Nigella Express on TV. A lot of the things are ten or so minutes of prep, and then whatever cooking time.
