I love the sugar peas in the pods. I'm growing radishes in my window at the moment, they're a longer version called "french dressing", they'll be ready by the end of the month. Spinach. Broccoli is great either raw or steamed. I love cauliflower, got into that in the last year. Baby carrots are great for just snacking or throwing in with a roast.

Potatoes are good baked, french cut into fry shapes and baked, I'm going to try to fresh "potato chip" them. I vary my lettuce so I don't get tired of them, I like any version that is not iceberg. I like colored sweet peppers and grow them in pots also.

Tomatoes are nice, I grow them in my pot garden, I go for the types that are not huge, and the yellow pear is my favorite at the moment. Tomatoes out of the store are bland to me, my garden fresh ones are really tasty. I especially love a bit of basil with my tomatoes, also being grown in a pot. Roma is another favorite of mine. I got a new seed from an expo today, I hope that turns out nice too. Basically anything not red is really good, I had a cherry sized orange tomato one year, but it only comes in a mixed packet, so I can't get just the orange one specifically.

An excuse is just a challenge to figure out how to do something different.

DMR023, I love kale as well; it's such an underrated vegetable but it's so good for you. I've not had it raw in salads, though, I'll have to try that. Usually it winds up in a soup for me or I'll cook it down like collard greens, long and slow.

I love so many vegetables, its hard to choose! I've been eating a lot of kale lately; I put it into a lot of recipes in place of spinach, and I love it raw in salads, and I even made a pretty tasty kale and toasted walnut pesto recently.

Maklor - I put it into soups and stews as well, but lately I've been cutting it up small and eating it raw as a salad. Last night, for example, I made a salad out of escarole, chopped radicchio, sweet onions, yellow bell peppers, a little blue cheese and topped it off with a light red wine vinegar vinaigrette. Even though it's Winter here in NY I crave salads all year but the regular lettuces aren't as 'pretty' right now.

I haven't had pasta e fagioli in such a long time, think I'll make some soon, it's so delicious.

So, Chefwitch...

What are you cooking up with escarole? Many moons ago I lived with an Italian family. The mom was a fantastic cook. She used escarole a lot in soups. I have added it Pasta e Fagioli and used it in other soups. Would love to know what else I might explore with it.

Its too hard to pick a hands down favorite. I love most veggies. However, I am discovering some of the sturdier greens these days - kale, chard, mustard and collard greens. They take up a ton of space in the fridge even after I trim the stalks and burp air out of the ziploc bag, but they are worth it. Ralph's carries a bag that has a mix of all but the kale. I like the texture and nutrition these greens bring to soups and am having fun finding other - hot and cold - ways to use them. Am open to suggestions.

The newest thing I've found was in the last issue of "Eating Well"--a recipe for winter squash roasted with garlic, a little olive oil, and flat leaf parsley. The picture looks good enough to eat--can't wait to try it out!

Wow--these are some great ideas. A lot are similar to how I do veggies--simply--so their flavor really shines.

The roasted beets, sweet potatoes and brussel sprouts--that sounds great and has all of my favorites except for spinach and asparagus. Yum!

Thanks for more ideas, folks.

My tip: Roast some radishes. Even if you don't like them raw, you would be surprised how they turn out when roasted--nice and mellow!

Great topic! I love steamed asparagus with a (plain) yogurt/citrus dip. Delish!

I also like to roast asparagus (around 12 minutes, at 400 degrees) in a light mixture of extra virgin olive oil, black pepper, sea salt and minced garlic. Actually many veggies roast well in this manner. (Hint: line a shallow baking sheet with foil for easy clean-up.)

It will be great to have a new selection of spring veggies, won't it? Happy eating!

They deliver organic food to your house. For example I get one box for $38 I selected a 2/3 fruit and 1/3 veggie box. They send you what is in season. A friend in my town gets them and she was raving about the quality of the produce. I have only had one delivery so I will see.

In my town they deliver on Thursday. I am not sure how widespread they are but I live 45 miles from San Francisco.

I took the plunge today toward eating more veggies. I ordered a produce box from planet organics to be delivered every week. I am sure that I will have no idea what to do with a lot of the veggies, but it will push me to learn...

I should admit that it is a 2/3 fruit and 1/3 veggie box, because I don't want to go completely overboard...

mostly I like them plain with butter, but I love beef and broccoli and I like a spinach 'bread' that was in a Suzanne Sommers book [mostly spinach and eggs,no carbs].

I think I eat fruit more because It generally requires no prep. Banana, apple, plum, grapes, nectarines, prunes... They are just grab and eat.
I never have enough time to cook well. So dinner is usually a piece of broiled or roasted meat or fish and a side. And too often the veggies are just frozen in the bag stuff. Although we do have peppers and onion and mushrooms on grilled meat... They are quick...

When I make chicken or tuna or salmon salad, I add lots of celery, onions, carrots, mushrooms to the mix. I use a little avocado and olive oil instead of mayo. Or if I really need it to be creamy, I'll use yogurt or cottage cheese.

We make a veggie scramble by lightly sautéing anything left in the crisper on Sunday morning, and then adding a few eggs. It turns out good every time.

And adding tomatoes and kale to beans or soups ups our veggie intake.

I actually have the opposite problem. I usually get enough veggies, but not enough fruit!

The world outside reflects back to you the energy you give it!

I LOVE steamed Asparagus! Also, as a little snack in the afternoon I will sometimes bring sugar snap peas & cut up summer squash and dip them in roasted red pepper hummmus! YUMMEE!!

The only one I'm not fond of is lima beans!
We eat a lot of spinach, kale, cabbage, brussel sprouts, egg plant, peppers, leeks, tomatoes, broccoli, cauliflower, beets, artichokes,

I have to be careful about nightshade plants because I have allergic or gastrointestinal reactions, particularly to eggplant and tomatoes.

So, I go for field greens, haricots verts, baby peas, sweet potato and broccoli (steamed, with mayo - something I learned to love while living in Japan as a child). The theme is mostly green, hahaha!

How you prepare your veggies can be inspired:

steam, season with fresh or dried herbs like tarragon, parsley, lavendar

dice into rice pilaf or quinoa

stir fry

"stew" for couscous

chop and saute with onion, garlic and basil as fresh sauce (no tomato paste) for pasta

make veggie timbale (I'll have to find my recipe)

make veggie "pancakes" - much like potato cakes

shred into your salad

Hope this gets you thinking of new ways to prepare your favorite veggies!

I do really well getting a variety of fruits but I alway seem to come up short on veggies. So I want to know what veggie do you like besides the standard peas, corn, green beans. I need some inspiration!
