I eat breakfast, lunch and snack at my desk every day so I'm always trying to mix things up to keep from getting bored.
If you've got a microwave and fridge, it's pretty easy to bring left overs from dinner to reheat for lunches. I made a stir fry last night, and when packing the leftovers away, put a small portion in a container for my lunch today.
One really easy lunch that I like - combine 1/2 cup black beans, 1/4 cup reduced fat shredded cheddar cheese and 2 tbsp salsa. Heat until warm and fill in whole wheat tortilla.
Another recent find that you can make the night before and reheat the next day (it's so easy, I've actually made it in the mornign while getting ready for work too) - sautee some garlic in a little bit of olive oil, add frozen veggies (I've used spinach and mustard greens together, and a mix of asparagus, green peas, corn and roasted red peppers) and cook until the veggies are done. While veggies are cooking, prepare your choice of pasta, add 1/2 cup of the cooked pasta to your veggie mixture and cook until everything is blended.
Breakfasts - I've been eating a lot of cottage cheese lately. 1/2 cup mixed with 1/2 cup fruit, some chopped nuts and cinnamon.
I also like Greek yogurt - this morning I had 1/2 cup plain non-fat with a banana, a little bit of honey and 1/4 cup of granola.
I mix all these together in containers the night before so in the morning I can just grab and go.
For snacks, I like baby carrots and celery with hummus, apples sliced up and sprinkled with cinnamon, or apple slices with peanut butter, the fruit flavored Greek yogurts, or just plain fruit.
