Have you tried the SP veggie Ebook "Easy Vegan Meals?" It has some very good recipes and is only $2.99. My personal favorites are the "Ginger-Orange Tofu" and the "Vegan Tuna Salad"

There is Vegetarian Lasagna. Also, the nutrition planner can give you ideas if you click on vegitarian.

Since I am not a vegetarian, but trying to give it a shot for a few weeks, adding eggs sound like a good source of protein. That was a worry for me, thinking where I would get some protein, but thought some fish would be ok if I had to, tho my daughter wants to add chicken, then it would not be vegetarian, but at least I would not be having beef at all for several weeks and several meals with no meat at all.

Some vegetarians don't eat eggs, some don't each dairy either (vegan). It depends on them... my hubby is veggie and he does eat eggs and dairy (thank goodness!)

Yes, you have given me an idea or two, I did not think I coud eat eggs, but knowing that opens up a lot of possibilities. The baked potato helps too.

The stir fry tonight was really good, bought enough to make another later this week, all I have to do is change up the spices and it will be different.

This post isn't so much "recipes" as it is food ideas, ok?

- sauteed cabbage (put onions, peppers and carrot in it too)
- baked potatoes with veggie toppers - sauteed onions & mushrooms, steamed broccoli.
- baked sweet potatoes.
- a pot of bean stew, good veggie stock brown some onions, peppers and garlic, also saute some celery and maybe add a can of tomatoes. I make a pot every 10 days and serve it over rice and like a soup/stew. DH loves his beans. Also make a pot of lentils with lots of stock veggies and try some new spices.
- bean/lentil burgers. There are a lot of easy recipes on line.
- try a red lentil and sweetpotato dish. We love them together.
- remember, breakfast can be a good dinner too! omelets w/lots of veggies, whole grain pancakes with fruit. The occasional evening oatmeal is very satisfying.

I am trying an experiment for the next 3 weeks, I am eating vegetarian, so I need some recipes. Easy to fix and no soy or tofu please. Just simple stuff, tonight I am fixing a stir fry in the wok serving over brown rice, so today is taken care of as I has a nice salad for lunch and will have a all veggie soup for tomorrow for lunch, but well I can not do stir fry every night for 3 weeks.
