"oh it's not that hard"...lol, I can't do it, but here's some pointers: (I know that some of them might be pretty obvious, but since it took a bit to actually think about how it works instead of just naturally doing it, I'd put it all out there.)
to roll completely straight, your Wiimote must remain "flat" (buttons up) through the whole swing. (There is a forward/back tilt, because of the swing, but NO side-to-side motion.)
To curve left, tilt it towards the left side.
To curve right, tilt it towards the right side.
To "pop" it up (where it goes over the solid wall in the video) you have to swing it and release it high up. (Not really good at this one, but I've done it a few times by accident.)
I'm not a super good bowler in Wii, most definitely not in real life (it's worse than on the Wii), but I have seen my father-in-law try out every bowling move there is in the game and be able to do them. So, the amount of control in it is incredible.
Try it out, and keep practicing! and always have fun!

Happiness is a butterfly, which when pursued, is always just beyond your grasp, but which, if you will sit down quietly, may alight upon you. ~Nathaniel Hawthorne
