Great idea! Still not sure what my final plan is for the holidays, but I did sign up for my local "turkey trot" which I will do Thanksgiving morning. Love hearing the healthier versions of an otherwise fattening season!!

I'll start this off by saying i happen to be addicted to food magazines and cookbooks. I really love food and I love to feed others---part of how I got to my size. And I personally ADORE potatoes so my first recipe is for latkes (even though i'm not Jewish. They're still tasty).
POTATO AND CELERY ROOT LATKES WITH HORSERADISH (FROM WEIGHT WATCHERS) o 1 cup fat-free sour cream o 2 tbsp horseradish o 2 pounds russet potatoes, peeled and shredded o 1 celery root, peeled and shredded o 1 small onion peeled and shredded o 2 large eggs, lightly beaten o ¼ cup all purpose flour o 1 teaspoon salt o ¼ teaspoon black pepper o 6 tsp canola oil Combine sour cream and horseradish, keep cool Combine remaining ingredients besides oil. Mix and form into 24 disks, each about 2 ½ inches in diameter Heat 2 tsp oil over medium heat to cook one batch of eight latkes. Repeat until all are cooked (3 to 4 minutes per side) o Serving: 1 latke and 2 tsp sour cream. 68 calories, 2 g fat, 19mg Chol, 124 mg Sodium, 11 g Carb, 1 g fiber, 2 g protein.
