Hello teamies! Hope your weekend is going great!

I wanted to share a healthy summer salad that I took to my potluck last night and it was a hit!
Very simple and fast to make.

2/3 jicama, cubed
2 cucumbers (lightly peeled, cut in half lengthwise and then slice as thick or thin as you like)
1/4 C virgin olive oil
2 limes, juiced

Mix it all together and sprinkle lightly with chili powder. The chili powder does not make it hot, just adds to the flavor!

I brought very little back home with me. The jicama and cucumber are very juicy and it was delicious served cold. I put it all in the refer for a couple hours and then mixed it all up again. By that time there was juice on the bottom to moisten it all up.
