today my salad has tomatoes and celery and nectarines emoticon emoticon
Long Island New York



I started a month ago , but I didn't go nowhere.
Why? I am finding everything I do tiresome and very difficult. I am trying to continue and get somewhere with my fight for a better life. My health has been going down in the last 5 years. I am 73 and recently I am experiencing quite a bit of pain with this injury of a sciatic nerve. Of course that has nothing to do with my continued to eat things are not beneficial for me. I believe depression is the cause of wanting more sweets, is my weakne

I'm going to slice up a turkey burger and put it on my salad for dinner tonight. I had a taco salad (homemade) last night with mostly salsa and a little ground beef, a few crunched up tortilla chips.

Thank you Pam for the quinoa salad recipe. I have also made version with cinnamon, dried cranberries and slivered almonds that was quite good. I had wondered if the grit might have been undercooked quinoa. It must have been.

Today I missed out on having my salad. I love salad! I love veggies! I will enjoy a large one tomorrow!

Sounds great! Anything with Feta, sunflower seeds must be good. I would use balsamic vinaigrette though. It's just a bit litter and still low cal. I also think I would quinoa as I don't care for brown rice. I think I'll have to try something similar. You've given me a great idea. Thanks.

No, not all. You must not be cooking it right. I know if there's not enough water or you don't simmer it long enough it can be a bit crunchy. It has happened once. I added some water to it and nuked it for a couple minutes and it was fine. Here is my basic recipe. You might want to cut in half the first time because it makes 8-9 cups.

2 cups dry quinoa
1 1/2 C water
1 Can diced tomatoes
1 Can Black Beans
1/2 Can Corn
1 med onion
2 tablespoons crushed garlic
1/2 t salt (needs salt or will taste flat)
1/4 Cajun spice
1/4 chili powder
Pepper to taste

Rinse quinoa thoroughly.
Add Diced tomatoes, black beans, corn, diced tomatoes and spices to largish pot.
Sauté onion and garlic in small amount olive oil until onion is soft. Add to pot.
Sauté quinoa in small amount of oil for about 3-5 minutes. You will probably need to do in batches. This brings out the taste of quinoa. You can skip this step if you like.
Heat pot to boiling, mix in quinoa, cover and turn down to simmer for 20 minutes. Take off heat, fluff with fork and let stand for at least 10 minutes. Refrigerate until you want to eat. I eat it 1 packed cup at a time, heat in microwave and then mix in about 2 tablespoons (or more if you like) Basalmic vinaigrette and eat. It can also be served cold with the vinaigrette.
You can add almost anything to it like diced bell pepper or diced chili or whatever you like.

Give it a try and let me know what you think. I make this about twice a month.

Pam, I have such a hard time with grit in my quinoa, even when I rinse it. Do you find your quinoa to be gritty? I'm uncomfortable eating it any more because I feel like I'm crunching on sand every few bites.

I put every veggie I have in my fridge then I like to add a hard boiled egg raisins, french's fried onions (2 tbsps =45 cal.), and chia seeds. Sometimes some fresh ground black pepper. Then I put 2 tbsp of my favorite light dressing.

Yesterday I picked up some beets - canned ones - can't get good fresh ones locally. Need to check at the Farmer's Market tomorrow. I don't know when the season is for them.

Lettuce, cucumbers, match-stix carrots, marinated mushrooms, marinated asparagus, roast chicken, and a sprinkle of cheese. I don't care for dressing much, but I like how vinegar mixes with a little ranch. Ranch Vinagrette! Yum yum!

Romaine, tomato, onion (scallion when available), chicken breast, half ounce of colby-jack shredded cheese, broken pieces of a taco shell instead of croutons. Lime and canned black beans when available. I started making this because I loved McDonalds Southwestern Salad. I use a light vinaigrette for dressing.

We do iceburg lettuce with a spring green mix in it that includes romaine, spinich, & other greens ( i buy it from the produce store already mixed). Then shredded carrots, some type of shredded or grated white cheese, onions, sometimes broccoli, sunflower seeds, cubed up ham or turkey, cucumbers, radishes and then we change up the dressings

I love Romaine Hearts. I will eat them with diet dressing. I have Thousand Island once in a BLUE MOON. It is the WORST dressing for people on a diet.

The salad is 9 times out of 10. Romaine heart, cucumber, croutons, mrs. dash.
SOMETIMES....Tuna

If it is a store bought..I get the ready made. There is one with dried cherries, nuts, and a yogurt vinegrette dressing.

My dressing choice is Vinegrette or Ranch. Sometimes blue cheese.

Other toppings when I have them are......radishes, onion, broccoli, green pepper, baby carrots, mushrooms, olives (black), egg (if out)

All those salads sound yummy! Lately I've been putting Romaine Lettuce, fresh tomatoes from the garden, fresh cucumber from the garden, feta cheese,black olives, a few croutons, whatever nut pieces I can find at the time (walnut, pine nuts, almonds etc) and I add a tomato basil dressing.

Lots of veggies on my salads!
I love putting on shredded carrots and beets for some extra crunch!
Also, if I am in the mood for creamy salad dressing I'll put on a little for flavor and add some low fat/fat free cottage cheese - this gives extra calcium and protein, too!

I had a wonderful "Michigan salad" today. Spring greens, dried cherries, walnuts, mandarin oranges, tomatoes, grilled chicken and to much cheese. With a raspberry vinagrette dressing.

I almost never eat out. I chose to take my sister and her best friend to lunch today. We walked to the restaurant. It was my way of saying thank you... They are both walking in the breast cancer three day next week. Team name "Breast friends 4 Joette" :D I also surprised them with goodie bags and a banner for their tent.

Marzetti Otria Greek yogurt dill "dip" makes a wonderful dressing. .25 of a serving is plenty. I love tossing it with cucumbers, or other veggies.

Husker I find it has less odor when grilled, but I marinade it so most of the aroma is from the marinade. When I steam cauliflower I add a little lemon to the water and that helps cut the odor also.

Like you I get bored of eating the same thing and love to cook and create in the kitchen. In the past this meant foods that were delicious but high in calories and fat. So I've been spending a lot of time playing with fruits and vegetables and other healthy goodies to create delicious meals, especially salads. For example today I made a roasted vegetable salad that turned out sooooo good! Last night I chopped up (good size for roasting on the BBQ) asparagus, cauliflower, broccoli, mushrooms, red onion, zucchini, red, yellow and green peppers, grape tomatoes, carrots and threw them all into a ziploc with a simple marinade made of lemon juice, balsamic vinegar, a little olive oil, a couple cloves of garlic (smashed), thyme, rosemary and a little salt and pepper. So tonight all I had to do was throw all the veggies into my grilling basket and cook them until tender and yummy (I brushed them a couple of times with the marinade which is safe since no meat was in there). I put chickpeas and baby spinach into a big salad bowl and threw the hot veggies on top and tossed which wilted the spinach. I topped the salad with some herb goat cheese and served.

For the base use a mix of baby lettuce, kale, and baby spinach -- about 2 cups. On top, I put 1/4 cup of each of the following:

Broccoli
Shredded Carrot
Jicama
Tomato
Cucumber
Red Bell Pepper

Then I top it with 1/3 cup of a combination of organic pumpkin seeds, sunflower seeds, cashews and pecans.

The calories in this lovely big salad is 270 (w/o dressing)

I start w/ Butter Lettuce and I add: quartered artichoke hearts, slices of hearts of palm, blueberries, a small amount of bleu cheese crumbles and avocado. Then if it's a meal I'll add shrimp. I make my own poppyseed dressing using Splenda instead of sugar.

Don't take yourself so seriously. No one else does.

The definition of insanity is to keep doing the same thing all the while expecting different results.

Timing has a lot to do with the success of a rain dance.

I usually make a bean salad - green beans, kidney or great northern beans, shredded carrots, hard boiled egg. I don't put dressing on it until I'm ready to eat it. I mix together equal parts plain Greek yogurt and dressing of my choice, and top the salad with shredded cheddar cheese.

I love salad, but not just plain old lettuce! I like to pick up a bag of spring mix at the farmers market, mix in a little bit of lettuce, add cucumbers, read and yellow peppers strips, some grape tomatoes cut in half, slivered almonds, and fresh fruit strawberries, apples, blueberries, grapes, whatever I have on hand and a little bit of feta cheese. I mix it all together and usually use a balsamic vingarette just a bit over it. I have a full meal and I love it!!!

My husband makes a great salad. I call it his Farmer's Market Salad. He uses romaine lettuce, but only a little. The majority of the salad is a mix of vegetables that he picks up at the farmer's market. Tomatoes, cucumbers, radishes, red and yellow bell peppers, kohlrabi, and anything else that looks good. I prefer to top it with a sweet pepper and onion vinagrette that we get at the "Heart of Iowa" store, but anything you like works. What really makes the salad good is that it is not really a lettuce salad as much as a vegetable salad. My son loves it and he doesn't do salads, because he's not a lettuce fan.

One of my recent discoveries after playing with ingredients around my house I created my own "honey mustard salad dressing". I used plain greek yogurt, a little bit of honey, and frenchs spicy mustard". when i put it in the tracker, more than i ever could eat on a salad only had about 40 calories and a lot of protein.

play with stuff to see if you can create something amazing. :D

also, instead of dressings, try adding fruit to your salad you wouldn't normally think of. such as grapefruit, lemon, lime.. the zippy liquid might be enough to spice it up for you.

are you using salsa and beans in your salads?

skip the lettuce. make your salad with all the fixings that would go on the lettuce and leave out the lettuce.

I've been eating a ton of lettuce. So much that I'm starting to feel that if I eat much more, I'll sprout a cotton tail and long rabbit ears and start hopping around. I need a change in kinds of lettuce, toppings and dressings. Any suggestions??
