Good to know I am not alone :)

We have made the cheesy polenta with mushroom saute a couple times, and have done just the cheesy polenta throwing in a bunch of spinach at the end. less than 10 min meal!

Blackened Tilapia Baja Tacos p 118 --- really fantastic! I have tried fish tacos once before but they were not very good, this blew me away! We will be adding this one to our regular meals too.

I was reading it - I was just very bogged down with work for the past 2 months, but in my mind, I responded.
I have an older, similar book, "The Cooking Light Way to Cook." It's also a good book with lots of good info.

Cracked wheat salad with nectarines and parsley. P 83 yummy, used fresh roasted almonds instead of pistachios.

Yesterday we made the Cheesy Polenta with Mushroom Saute P 145. We couldn't find fontina cheese so we put 2 oz of Parmesan in the polenta and topped with 2 oz of Gruyere. The parm was supposed to be gruyere too, but I made a mistake. It tasted fantastic!

Today we made Artichoke and Goat cheese Strata P148 ...it was bad bad bad. what a disappointment! We followed the recipe exactly.

Today we made the Onion Tart P146. Tasted Great! I think we will make it for company some time.

One problem-sent my husband to get groceries and wrote 1 oz of each cheese, he came home with 10oz of each. Yikes.

Hi I am new here. My husband picked up the Cooking Light- The New Way to Cook Light Cook BooK two weeks ago and so far we are very happy. The pictures make me want to cook and inspire me to put the effort in. The three recipes we have tried so far have blown us away. Not only do they taste great they tell you how to measure the servings (eg 3 oz meat, 1/4 C sauce and 3/4 C Vegetable mixture) so you aren't guessing with the calories! I may or may not review the recipes we try, but I will say that we are going to be using this book while we are on "the plan" (what we call dieting and exercising).

Here are the ones we have tried so far

Beef Pot Roast with Turnip Greens pg 178 we could not get the turnip greens so we used spinach and it tasted great, even better the next day.

Mongolian Beef pg 177 pretty awesome but would add the green onions at the same time or after the soy sauce mixture.

Mushroom and Sausage Ragu with Polenta pg 250 my husband loved this and we felt so full. I could not believe that one serving was only 428 Cal! Ours was a tad salty because we didn't use low sodium chicken broth, but I really like my food salty.
