Oh wow. I just read an old post & found out that I've made the Mexican Chocolate Cookies before. I don't even remember that. huh.

I guess I am just drawn to certain flavors. (At least it was a good review, but now I'm torn about making these again).

We're having a cookie exchange at work next week, so I decided to bump up this topic.

I brought them to my work potluck this year, and everyone loved them. The recipe is for a small batch; I always double it. I also use half wheat flour, half white.

Maple-Pear Upside-Down Cake

i had this in my recipe binder--from 2001!!!

i had 4 ripe pears staring at me in the face this morning, wondering how to use them before they give out...and i remembered this recipe....

but i will morph this recipe into something more superiorly nutricious--ie add whole wheat flour and ground flax seed--i have been very succesful in incorporating these ingredients into cooking light baked items in lieu of white flour

A pear upside-down cake sounds delicious.
Is that a variation on the apple upside-down cake from October 2010, or an entirely different recipe?

I made this a couple of years ago. The recipe was super easy, and I thought the shortbread was delicious.
My only complaint is that the serving size feels very small (to me) - but that might just be because I've spent too much time overeating in the past.

I still recommend this.

i don't make cookies--but i make tons of yummy muffins and coffee cakes from cooking light magazine---i just pulled a pear upside cake that i will make even more healthier by taking out the butter completely and substituting with yogurt
