i had 4 ripe pears staring at me in the face this morning, wondering how to use them before they give out...and i remembered this recipe....
but i will morph this recipe into something more superiorly nutricious--ie add whole wheat flour and ground flax seed--i have been very succesful in incorporating these ingredients into cooking light baked items in lieu of white flour
I made this a couple of years ago. The recipe was super easy, and I thought the shortbread was delicious. My only complaint is that the serving size feels very small (to me) - but that might just be because I've spent too much time overeating in the past.
i don't make cookies--but i make tons of yummy muffins and coffee cakes from cooking light magazine---i just pulled a pear upside cake that i will make even more healthier by taking out the butter completely and substituting with yogurt
