I tried the low sugar protein pudding recipe on Spark Recipes - only I made mine with Almond Milk (more protein, more calcium). But next time I'll use regular cow's milk (even though I don't prefer it) b/c the almond milk kept it from setting to a pudding like consistency. Made an awesome smoothie though!

Ham and cheese omelet and strawberries and bananas for breakfast with 2 cups of coffee and black beans and oatmeal for supper. No snacking between. I'm in my vacation mind set right now with my eating even though I'm not on vacation. That is how light I eat when I'm on vacation. I hardly snack. If I do its very light. Like a bird light.

Lately I've been wanting things that are quick. I've been eating Jamie Eason's Turkey Meatloaf Muffins quite often lately and I love them! Sometimes I have veggies or salad on the side, sometimes a little fruit or some cheese. These things seriously rock, freeze and reheat well and are also tasty at room temp. Bonus, my family likes them too.

That sounds yummy, BUBBLEGUM_FAIRY. Just wish that I had everything that you can make it with including the blender. The only time that I eat like a princess is if we're on vacation. I eat so like you swear that I'm just snacking all day long.

I am struggling with money right now, but I have made cherry smoothie today with some cherry yogurt, blueberries, cherries, and a little cranberry juice. It has kind of a blackberry taste to it. I loved it! emoticon

My four year old wanted me to have a "peanut butter and honey sandwich" with him this morning. So I made mine on double fiber bread. We had bananas on the side. Actually really tasty this whole combo. I don't know why I haven't eaten it in so long....

Today I am making Low fat cheeseburger pie, without the hamburger. Basically all you do is use a pan and put on some bisquick heart smart mix for the crust. You cook ground turkey, put on top the Bisquick, then top that with fat free cottage cheese. Then you top with some shredded cheese and tomato slices. So simple, cheap, and yum. emoticon

Will have a crab salad made with the "low carb" pasta. Read mixed reviews abt it so will have for lunch and monitor my blood sugars closely. It is raining and I don't want to go to store so for dinner I will have a hamburger on a whole wheat bun with my home made shrimp sauce and spinach leaves. My snacks will be sugar free pudding cups since I am out of milk.

Veggie soup made with with zucchini, yellow squash, onions, peppers, beans, tomatoes. Also a sandwich with left over pork. I eat a lot of homemade soups and sandwiches because it is hard to cook for one. Rarely eat out because of the sodium content.

For lunch I had a large salad with lettuce, tomato, carrots, cucumber and homemade buttermilk dressing. For dinner a (good tasting) protein bar and a glass of milk. My late snack will be a pack of whole wheat crackers with peanut butter and a glass of milk. I also had a carb smart almond ice cream bar at a birthday party.

Slow but will get there!

Chili beans and cornbread with cucumbers, onions and tomatoes..Will also eat a ff blueberry yogurt with fresh blueberries and strawberries in my crystal dessert dish that I only use on special occasions. It is very pretty.

I love your meal plans Tanya! Fantastic! Wonderful ideas! emoticon emoticon emoticon I am looking for that dark chocolate peanut butter, and I can't find it at my local store, but I will keep looking.

Today for breakfast I had a smoothie pancake with sugar free syrup and berries. (The smoothie mix is from Weight Watchers that my sister gave me. This one was chocolate. yum!, and then mix it with 3 egg whites, and it makes a big yummy pancake).

Snack: cheese stick and apple

Lunch: turkey sandwich on whole wheat English muffin with mustard and tomato and cucumber. And a fruit salad.

Afternoon snack: greek yogurt with berries.

Dinner: not sure yet. emoticon emoticon emoticon

Just had the most delicious afternoon "meal" -

1 small frozen banana*
1/2 cup frozen pinapple
1 cup almond milk (i use Almond Breeze Unsweetened Original)
1 packet Weight Watchers Creamy Coconut Smoothie mix

Whir it all up in the blender and enjoy - it tastes like a little virgin pina colada, perfect for cooling down on a hot Texas summer day...

*a tip for frozen bananas. when the bananas at my house are too spotty for me to enjoy fresh, i peel them, wrap them in parchment paper and toss them in a gallon size zip- top freezer bag. seal the bag and pop it into the freezer. its a great way to get fruit into your day, use in place of ice in any smoothie (or even protein drinks), grate or chop into yogurt, dip in melted chocolate, etc... My son likes to make "ice cream" from the frozen bananas. Just whir in the blender until its the consistency you like (may need to add some liquid depending on the bananas and your blender - i prefer almond milk, my son prefers cow's milk - just a splash does the trick if its too thick)

decided i am going to start "eating like a princess." today for breakfast i had toast with peanut butter and a banana. for lunch i brought a yogurt and a granola bar to work :-) i have to figure out what i am going to eat for dinner so i dont get trapped and starving and end up eating mcdonalds

I've challenged myself to cut out the white sugar this month so my choices are reflecting that. Trying to get healthy! Yesterday, I ate chobani greek yogurt with a tbsp of chia seeds and .25 cup of Kashi GoLean Crunch. (they still have a type of sugar but not white sugar so I'm happy with that), I also ate a protein shake with a cup of frozen blueberries, a half egg/ half egg whites scramble with spinach and salsa, chicken and broccolli, and a tuna sandwich and an apple. I think that was everything from yesterday. This morning, I'm eating my usual chobani again with chia seeds, no golean crunch as I ran out. :(

We are having chicken kabobs and assorted veggies on the grill for our holiday. I LOVE grilled roasted cherry tomatoes - just a foil packet full of tomatoes and crushed garlic put on the hot part of the grill until the tomatoes burst. Yummm

I am having ranch burgers, a recipe I got from spark with corn on the cob. Basically all it is: ground turkey, dry ranch mix, and fat free shredded cheese. I actually prefer these over regular hamburgers. emoticon
