It is hard at first to get enough water - but once your body is used to it, it will be hard to not drink enough. There are tons of tips on SP message boards about how to get enough water.
My personal tricks include ALWAYS carrying my refillable water bottle with me. In the beginning, tracking water was helpful for me too. I also try to drink at least 3 glasses of water before lunch, and another 3 before dinner. Then 2 at night. This pacing works for me.
One guy I know kept 8 pennies in his left pocket, and whenever he drank a glass he moved a penny to his right pocket. A girl in our group used the same method but put 8 little bangle bracelets on her left arm and moved one over to her right with each glass of water. These visual aids can be really helpful.

What is your calorie goal? Are you getting enough macronutrients (protein, fat, carbs, etc?) You do need to eat enough calories - to keep your metabolism going, but a few days of being under while you get the hang of things won't hurt you.
