Back to cucumbers again. I put thin slices in water to flavor it. Also put plain tuna on light bread with 2 tbsp whipped cream cheese with Greek yogurt. You can add onion, relish, green pepper, cucumber, radish, spinach, and/or lettuce, tomato...

My weight is day by day becoming more dependent upon Whose I am than on my circumstances and feelings.

Life here is a one-time deal. I want to live it well.

I just read about making pizza's using portabella mushrooms. Great idea. I'm trying it soon!

It's somewhere like 21 calories for 1 cup of mushrooms so I would guess somewhere in there depending on how big your mushroom is, but it is very low!...and yummy!

An excellent substitution for bread is lettuce or tortillas (low fat/high fiber ones please). I like to throw a tortilla on the food scale, zero it out, & then toss on some cooked turkey or ham. Roll it up & toss in a baggie. At lunch time, just pop in the microwave for a few seconds. Very low cal, low fat even if you add a laughing cow wedge to it! Quick & easy. What? You say you want veggies, just pile on the lettuce, tomatoes, & onion - though you might not be able to roll it closed!

combine in a bowl some thinly sliced cucumbers, sliced red onions, add a pinch of splenda, and 1/4 cup seasoned rice wine vinegar. let marinate for at least 20 minutes.

I put cucumbers on most of my sandwiches during the spring and summer. They give me a fresh snap on them. Hubby is coming around to having them on a few of his.

A couple of years ago on Next Food Network Star, someone made a BLC -- bacon, lettuce and cucumber sandwich. The judges absolutely RAVED. I think I'm going to try to replicate that.

Thank you i like this topic ! I don't like plain water so i use zero vitamin water to flavor it ! I use 1/2 cup of the flavored water that is sweetened with stevia to 31/2 cups of water ! Also i use a kids popsickle maker and make popsickles with it full strength ! emoticon Wal-mart carries it for 1.08 a bottle ! emoticon

Not sure if there was a post similar to this because I am new here. But I wanted to start a topic with food tips to make a meal or snack healthier or lighter.

When making tuna salad use cucumber slices instead of crackers.
