Last night dinner was fish (cod), brown rice, mixed veggies, and salad. We add a bit of shredded cheese to the rice - Yum Yum!!

Saturday evening I meet my other son out for dinner - not sure where we will eat this evening.

i made tacos. my hubby does not like to eat tacos, but i love mexican and like making it myself because i can use green leafy lettuces (not only iceberg) and real beans, not refried.

Tonight I think a salad is in order for dinner. Its pack the trailer for camping this weekend night so dinner has to be easy. Not sure of the camping menu yet, but I will try for some healthy stuff !!

Have not been cooking meals this week. had fast food a couple times. i been avoiding some temptations but not doing great for the eventing meal. i am better at breakfast and lunch. i just need to work on snacking when i get home from work and having a healthy supper.

i made chili in my slow cooker this weekend. makes it easy to warm up simple healthy meals during the week. sometimes we keep changing the plan as the week continues. but if i can stay more mindful of my evening meals and snacks so i can reach my goals.

Hello my fellow Cookers,

Tonight is Broccoli Beef over rice (yes the bagged dinner stuff) emoticon but I am adding a head of Broccoli (Is it called a head)? and cooking some extra rice for the extra vege boost and water or maybe some Iced Tea with sweet & Low. I only have about 3 hours from the time I get home til its bed time so dinner has to be fairly quick otherwise I am eating at 7:30 at night and going to bed @ 9.

Ok, enough whining for me, Have a wonderful night !!

Ravioli - yes from a can. but it was quick and lower calories and fat (and cheaper) then if i picked it up from a restaurant. i am drinking extra water so that should assist with the extra sodium

my main ingredient for supper went bad so i used a plan b. - not fast food. yes i nuked something, but it was lower in fat/calories then if i would have gone to a fast food resturaunt.

My DH will be going on a business trip so i will have 3 days without him. I will have no excuses if i don't have a healthy supper. we take turns cooking dinner and sometimes we don't follow through. this week i will have to stick with my plan. it is all on me.

Day 3 of my personal challenge, 'Running Back To School' went well. Jog At least a mile a day, every day, until 8/14.
Stay outside and run from the 'deadmill'.

I know it has been a week since my last post. It ended with the drama of my sister getting a flat tire & I had to find away to fix it. But them from the day after it started working out. I had a long over due talk with her & let out all I was olding inside. So that was 1 drama I not only fixed but showed I could handle it on my own & showed my family I was in charge.

Then I went back to working on getting my online college going. I thought I had to wait weeks or even a month to get the money aid & all my papers in to start online college. I thought it was gona be harder getting in then making it out. But I was wrong. It took only 2 weeks to get all my papers sent to the college by mail, email or fax. They were really good at getting back to me about things I need done & things I got done. This past Tuesday & Wednesday I had 2 full days of online "Open House" I got to meet some teachers & soon to be good college friends. This Saturday I have a "Greet & Meet" day. Then next week I have my Orination Day. Then 2 weeks from Wednesday is my First day of class. I also already have my First homework assignment. Am so looking forward to this. I have 18 months to go then WOOHOO...

I also got an extra work days this week. Plus I sold my First winter scarf am making on the side for some extra sending money. I was so into making them I made 3 more. 1 for a man & 2 for a women. Now am working on a new baby blanket for my grand nephew Hayden. Then if all the good wasn't good enough I lost 1 more pound. I know it's just 1 pound but without trying & without thinking about it I lost a pound. Am starting to feel good about myself. Am working on getting my life in order & am working on getting my health in check. Woohoo I love it. To anyone who had a great week, stand up & take a bow. Your great & am proud of you.....

Good for you with college & weight loss! Congrats. You've had a very positive year!

I've been realizing my age here these past 4 weeks! This was our first week we opened 5 days rather than 3. I'm feeling aches & pains in places that didn't hurt before!
Oh well, I stayed the distance! Now, if I can just stay the summer!

I've gone back to a job that I've been a way from for 7 or 8 years. I cook at a European Restaurant & Bakery. Wow, Sure wear & tear on my feet, knees & back!

Now, one may think working in a bakery is not a good thing right? Well, I caught a cold & allergies attacked on top of that soon after starting work! I did not want to eat! So, I used that to discipline myself into eating less. It's worked so far!

I've had a few pastries but not planning on getting carried away with those! My feet are talking to me about this weight! ha ha

I appreciate all of you! You have been busy on here in my absence.

Sorry I been kind of away for almost a week. I kind of had a bad week last week with my truck tune up problems but I didnt go over my diet. This week is looking good. I might only have to use my truck a few days. And I did something good for my life & job. I am trying to enroll into online colleges. I have only 2 more things to do & to wait on my money aid & AM in. WOOHOO. I know better late then never. Plus on top of all that I lost another 2 pounds.... WOOHOO....

Did You Know? Today makes 1 year since I had a cigg. Today makes 1 years since I had a beer. And today makes 1 year that I have been going to chruch. Alot can happen in 1 year. Now to see what the next YEAR will bring.

This year am eating right & better. This year am buying the right size shoes. This year I lost 9 POUNDS.... Not a bad start for a new year.

My Yesterday VENT......

A TEN hour doctor visit, that really only took 15 mns. Yesterday was my doctor check up rom when I fell & hurt my knee. My appointment was at 1:00PM. I got there about 12:30PM. So I waite. I took along my crochet bag & crocheted as I waited. At that mommet he didnt even go in to see the guy who had the 10AM appointment. 2:00PM came & went. He finally got to the 10am guy. I waited & crocheted some more. 3:00PM came & went. He was still in with the 10am guy. I waited & crocheted some more. 4:00PM came & went & he was still with the same guy. There was 4 people ahead of me. So I waited & crocheted some more. Then he finished with that guy & moved on to the next one. She took 1 1/2 hours. Then he moved on to the next one. 6:30, 7:00 & 8:00PM came & went. In between all theses hours the wanna be MMA fighter guys came & wanted to get their check ups because they are so SPECAIL . NOT. I was still waiting. By this point I ran out of YARN, had not eaten lunch or DINNER. Luckily I was now the only one in the WAITING room. I had to whole cough to myself. I had to the t.v. on, I was watching my favorite shows. I was laying down not comfy at ALL for the next 3 1/2 hours. Then came 10:45PM. I was told am next. It took another 15 mins before he got to me. I thought I would be there for the next 1 to 2 hours. But NO I was in & out in 15 MINUTES. I was happy & upset at the same time. I was happy he said my knee looked good. No call for seeing a knee doctor, just to take it easy & be more careful. I was also happy I lost 2... TWO more pounds. But yes I did,, the first & only meal I had all day was BREAKFAST at 7:30AM. My next meal wasn't until after MIDNIGHT. I was mad because when all the other ones got 2, 3 or even 4 hours of his time,,, I only got 15 MINS. Just like by that time I wasn't worth his time. I so need a new doctor & am tired

Coq au Vin has been around since there were chickens and vineyards. According to Julia Child, you must use a roasting hen or cock, this is a fancy way to say use an old bird. So when you go to your grocers pick up a whole bird labeled 'roaster'.
You embed a lot of sweet butter and a lot of herbs,( use Herbs de Provance), under the skin of the bird. then you generously coat it in EVOO and liberally use sea salt and cracked black pepper all over the bird. Put it in a roasting pan. Toss in your favorite root veggies, make sure to include a couple of handfuls of onions and garlic. Cover. Shove in a 425 degree oven for 25-30 minutes. Remove from oven. Add 2-3 cups very dry red wine to the bird. Cover. return to oven. Lower heat to 325 for another thirty minutes. Baste at least 4 times.
Check for done-ness by piercing thickest part of meat. If juices run out clear or a light pink, bird is done. Allow to set at room temperature for 15 minutes-covered! Serve right from the roasting pan.
Is this dish heart healthy? HELL, NO!!! Is there a healthy way to prepare this? HELL, NO!!

Did You Know May 29th is National Coq au Vin Day? Coq au vin or (a.k.a. chicken in wine)

Have you ever tried this?
Do you have a recipe for this?
How do you make yours?

I have never had this recipe. I have never even heard about this recipe before today. But I do like chicken & wine. I do know that some recipes do call of meat, poultry or fish to be soaked in wine for added flavor & to help make them tender.

That is so cool! I'm very happy for you! Now, if I could just do that! I went back to work at a European Restaurant & Bakery yesterday. I hadn't worked there in 9 years so I'm trying to get back in the swing of things! But I'm too busy to eat until 2 or 3 and by then I'm so tired!

Holly smokes. I never thought I would see this day again I never thought my weight would ever go down. I thought it would take forever FOREVER to lose even 1 pound. Then I hurt my knee a weeks ago. I wasn't able to really move let alone work out. I thought for sure my weight was gonna go up. But this morning when I went to a friends house to get ready for church. I went into the spare room & got on the scale. I was SHOCKED when I read what it said. I got off & got back on 4 times to read what it said. It said I dropped 7 SEVEN pounds. The only real new thing I have done was drink more water & eat less RICE. I feel so good now. WOOHOO

Yes, you can do it! Just be careful with the knee.
I applaud you the exercises! Hurrah!
I bought a Gazelle machine at a yard sale recently. I would rather have an eliptical but since this was only $7.00 I figured it was better than wishing!
So, it's set up & not hard to use at all!
I'm thrilled.

Hello & good luck all new comers. I hope you all like it here. I know I do. I wish you guys all the luck with your goals. To anyone who lost wieght. Thats AWESOME. SO proud of all of you. But if you gained a pound. It's ok your still AWESOME. You will do it next time. Your all awesome beautiful & spceial. WooHoo go team. But as for me.....

This week is not looking good. This is why I haven't been chatting much in my groups. My left knee is still hurting, but today there was a crunchy feeling today. Then my left arm as this numb tingly feeling. I tried to take the pain but I couldn't. I ended up going to the E.R. I wasn't there long. I got 3 x-rays each of my knee & arm. Nothing is broken. But the numb in my left arm is due to a deep bruise when I fell. I might have pulled a mussel or a ligament in my knee. It all should heal in a few days to a week. I do have an appointment to see my doctor next week. Back in the 90's I already had 2 knee surgerys on the same knee. So that's why i try to be very careful & worry about my left knee.

But on a good note. This week I have been doing sit ups or as they say "Crunches". I have always hated sit ups but I gotta do something to stay on top of this diet & this time around. I did 20 sit ups yesterday. Not bad but getting better.

Hi all. Hope everyone is having a good day. I'm attacking the knee high weeds with my little electric weed eater! I get a good head of steam going & then the bugs start swarming around the sweat on my face/head! Drives me buggy!!!!
So, here I sit cooling off until the next round!
I don't eat Souffle's but I love hamburger. Meatloaf, meat balls, SOAS over rice, I add it to beans and I like a Mex style soup with it. A lot of times I will mix it with ground turkey or Veggie crumbles also. And of course our favorite, tacos!
I hope your knee & ankle get better soon! That's no fun! I hobbled around for a year and a half or more with my right knee. TG it's better now! I take Glucosomine!
Well, back to the attack of the weeds!

Well I was having a great week. I burned all the calories they said I needed to. I only went over my daily food intake once. I stayed away from my food weakness RICE for 6 full days. Then last night I fell, twisted my left ankle & banged my left knee. It didnt hurt that bad until I got up this morning. Then I couldnt take it, so I went to the Urgent Care. They gave me good news & bad news. Good news is nothing is broken cause I can still walk. Bad news is I badly sprained my left ankle & twisted & Banged my left knee. They said I need to use ice & heat on it & let it rest for afew days to a week. They said it should heal in a week or I have to go back if it doesnt. I just starting week 2 & I cant exercise the way I did last week UGH. Looks & feels like I take 1 step forward & the world knocks me back 2 steps. Well nothing I can do but use ice & heat & let it heal. But on a side good news. They weighted me in & I lost ONE pound. Woohoo ONE pound down & 49 more to go... emoticon
