I would not chop it up in advance unless you are going to put it in oil. You can get a mini chopper or a garlic press but fresh is best.
An easy way to chop it is to put it on a cutting board and smash it with the side of a knife. The skin will come off and it will be flattened. Than you can just chop it easily.

When you're using the fresh garlic, cut the bulb and leave some of it with the roots (this is when you've pulled up your own and it has roots). Then plant those roots back in the same spot and it will grow you another plant.

I would encourage you to grow your own. We grow it in every little extra spot. In the opening of cement blocks, under the fig tree, behind the gardening shed, under the banana trees -- just everywhere. When we harvest it, there usually is enought little ones left to come up the next year. Good luck.

I have never grown my own garlic but I should. I am Italian and garlic is in everything. I love garlic. The way it smells and what it adds to dishes. What people that don't use a lot of garlic don't realize is that garlic tastes different when you cook it and when it is raw. Raw garlic is spicy and cooked garlic is sweet.
My only caution is don't burn garlic when you saute it or it tastes bad...

Do you grow your own garlic? We do. Sometimes I just slice my garlic very thin and sauté it with the onions.

I switched to using only fresh garlic years ago and have not looked back. I prefer to prepare it by whacking it with the flat edge of a knife and peeling it, then running it through a garlic press. Jared minced garlic usually can be used proportionately to fresh garlic. Once you try it, you'll discover all of the flavors you have been missing.

The thing to know about garlic is that when not cooked it is spicier and may repeat on you. I love it but some people have problems with it.
You can cut it up and saute it and than cook other things in that flavored oil.
You can put it in tin foil and bake it. It becomes very mellow and can be used as a spread.
You can also place whole cloves in oil and leave on the counter for flavored oil.

we have fresh garlic every night on our salad. I used to hate to deal with it...but now it's so easy. I put the big knife over the clove and give it a whack and wa-la the skin comes right off...then I put it in my little handy dandy mincing tool and squeeze the handle and it minces it. You can even put the clove in with the skin on it and it will mince and peel all at once. I don't do that much just because the knife thing is so easy...and it's absolutely true that after you have fresh you'll NEVER go back to bottled, jared etc.

Fresh garlic has a very different taste then the packaged stuff, even the "fresh" stuff in a bottle. Buy a single head and experiment with it. Try it chopped, diced and smashed. On websites there are videos on how to work with garlic for those that are newbies to the garlic world. It doesn't take that much time/effot to learn and once you do you'll never go back! Good luck with this new adventure.

Ok I usually buy minced garlic but i always see fresh garlic in the store and wonder what do i do with that? I am all about fast and easy. Do i use it that same way i would minced garlic. Do i slice it or dice it? Does it matter how big or small i dice it?????? Can i dice some in advance to save on pre time? Is there a dramtic taste from minced garlic.
