Yes we have an Excalibur dehydrator, it's great to make all kinds of healthy powders for healthy additions when cooking.

I dehydrate kale then powder it and add it to baked goods, Casseroles, Soups etc.

I've made chips by sprinkling garlic powder and baking it. Tonight, I combined it with some homemade salsa I had in a skillet, basically just wilting the leaves.

Oh! I was at Vons the other day and in the deli section they had a Super Kale salad. Basically, it had chopped up kale, some almond slivers, some sunflower seeds, craisins, red cabbage, shredded carrots, blueberries and some kind of vinagrette salad...something close to Brianna's Blush Vinagrette. It was totally delicious! Now I'm eating Kale all the time.

I throw it in my smoothies

I started out top weight 245 but that was when I actually got on a scale. I was diagnosed with fibromyalgia almost 20 years ago. Over the years I've learned that I do so much better when I eat organic foods and I haven't eaten red meat in years I have been gradually working more raw foods, vegetables and fruit into my diet. I avoid drive through resturants like the plague.

We grew Kale in the garden this past year and have planted it again this year. Loved it! My daughter has become the Kale maker. She washes it; tears it up a little; puts it in a tupperware with a small amount of olive oil, lemon juice and a dash of salt and pepper then bakes it at 350 for about 15 minutes. It melts in your mouth. We even served it as a appetizer at Christmas and it went over very well. My relatives expect us to bring healthy dishes but we have turned more than one person into a "lemon on their corn cob instead of butter- lover", etc. which makes us feel great. emoticon No kale emoticons! what's up! lettuce is the closest I could find. emoticon

Thanks. Looks good. I bought some purple kale and some organic kale for the weekend. It does take a little time to prepare. I was even saute it before I scrambled my eggs with it. A little bit of lemon and garlic, and it makes it more palatable.

Kale is one of my favorite foods. It's fabulous with whole wheat pasta, and it is a terrific addition to Italian-style soup like minestrone. Try this dish; it will change the way you think about kale forever. I tried to saute my kale this morning. Just put pam, garlic powder, and lemon juice. Came out kind of okay. Mixed it in with my omelet. Helps my veggie count for the day.

We love sauteed kale - we saute it with olive oil, fresh garlic, fresh ginger root, chopped onion, green or red pepper - chopped very small and a very small amount of turkey bacon. Then we add a dash of red wine vinegar at the end.

I also use kale in my green smoothies and make kale chips. I've never tried it cooked as I tend not to cook my greens at all.

As for freezing them, I just measure out a cup and freeze it in a ziplock baggie. In fact lots of my smoothie ingredients are stored that way.

I love kale. I use it in salad after I've massaged fresh squeezed lemon juice in it. I love kale chips too. When making kale chips make sure you've removed the leafy part from the stems and veins.

If you do what you always do, you will get what you always get. To get something different you have to do what you never did.

I balance the bitterness and bring out all the fat-soluble vitamins by stir frying garlic, onion, and kale in olive oil until wilted, then add halved grape tomatoes. Looks very colorful. Even my hubbie will eat kale that way.

I've been juicing with Kale for a month or so now. I have a big boss juicer and love the refreshing drinks and green juices (just not the clean up). One half of a lemon put in the juicer kicks the flavor up a few notches. I will have to try it sauteed, but I think I did once and was't too fond of it. The sun-dried tomato idea is a good one, as is bacon. bacon makes anything better UGH! lol

I add a handful of kale to my smoothie in the morning. You don't even taste it! My problem was that the package of kale is so large, I was consumed with kale, at every meal, and still had some left over! I now put it in the blender, with a smidge of water, and put it in ice cube trays. Voila, when I am ready for a smoothie, I just add 3 kale cubes, and no waste. Now I never have spoilage!

I'm just learning about kale and have been experimenting with it along with some of your ideas. I sauteed it in a little olive, then added some chopped sun dried tomatoes (not packed in oil) and scrambled in an egg and one egg went. The tomatoes really boosted the flavor. It's an easy way to get some veggies.

I think my favorite way to have kale is to saute it with a little EVOO, some garlic and a few red pepper flakes. My youngest son adds a little lemon juice to his and I often grate a bit of Parmesan cheese over mine. I've also cooked a piece of bacon that I chopped up and then wilted the kale down in the same pan. 1 or 2 slices of bacon are more than enough for 4 servings of the kale.

I wouldn't go into kale chips thinking it was a substitute for potato chips. They are good, but not the same thing! Think of them as a cool new snack - not a replacement. I found a dip recipe years ago that was billed as some sort of guacamole substitute - not. It was ok as long as I wasn't even thinking about it as being a substitute for guac!

I just read in Martha Stewart that you can also make chips from Swiss Chard, Beet Greens and Turnip Greens, as well as Kale. Toss with a little bit of olive oil to coat, spread on a cookie sheet and bake at 325 degrees F. for about 8 minutes.

Imust be doing something wrong but when I made kale chips it tasted like I was chewing on grass. So I just added them to soup and that worked. Any ideas on how to make perfect kale chips or what I did wrong, because I could never substitute these for potato chips!

I have to try CarrKM's recipe for Kale. I also have another recipe that my family loves. I got it from Rachel Ray and the original recipe called for red chard, but any leafy green like kale or collard greens can be used. I use both kale and collard greens.

2 Tbs. olive oil
1/4 - 1/2 lb. of ham, chopped
6 cups chopped kale, 1 large bundle or 1 prewashed and cut bag of kale
3 Tbs. red wine vinegar
1 Tbs. honey

1) Heat a large skillet over medium-high heat.
2) Add oil and ham and sear ham until it caramelizes at edges - about 2 minutes.
3) Add kale and wilt into the pan. Season with salt, pepper, and a dash of nutmeg.
4) Cook 5-7 minutes more, turning frequently with tongs.
5) Add vinegar to the pan and then add the honey. Turn to coat greens, adjust the seasoning if needed and transfer to a serving dish.

Love kale chips! I use a little of both olive oil and sea salt. For a variety I sometime sprinkle on freshly ground pepper and or Mrs. Dash seasonings.

Exercise has many psychological benefits including renewed confidence and self esteem.

Hi, Kale chips are great if you don't burn them, then they get very bitter, as I found out last time I made them, so watch them.
Sauteed with garlic and a little EVOO is good too.
Kale soup is a traditional Portuguese thing made with linguica sausage.
I've made soup with sauteed onion, chopped kale and cut up or crumbled chicken Italian sausage (or veggie Italian sausage); add chicken broth, maybe some canned or fresh diced tomatoes. You could add white beans or small pasta too.

I love kale! I like to bake small pieces of it with a teensy bit of olive oil and garlic salt sprinkled on top to make kale chips (my kids like these too). I also have fallen in love with kale salad this winter. All you do is remove the leaves from the stems, tear them into manageable pieces, squeeze lemon juice over top, sprinkle with a little salt and pepper, and massage the kale a bit to get the juice all over the leaves. It is super simple, and really yummy.

That sounds good w/the brussels! I usually roast them in the oven, but cranberries are a great pairing!

Oops - forgot to say, cover the pan when you remove it from the heat. You want to trap the steam so the kale continues to cook/wilt.

Oh, my husband and I are hooked on kale! Here is our favorite way to make it:
You need: Kale, chopped nuts (we like pecans or walnuts but you can leave out), olive oil, garlic and Crasins.
1. Wash the kale well and chop it
2) Saute the nuts in about 1 TBSP olive oil until fragrant; add the crushed garlic to taste and saute for about 1 minute.
3) Add the kale and saute/stir for 3 - 4 minutes (until it's really hot)
4) Remove from heat and let sit for 10 -15 minutes, so it will soften
5) Put on plates and top with a TBSP or so of dried Craisins.

We love this - as a matter of fact, now I'm craving it!

We love kale in our house and have it weekly. We just steam it until it's a little tender. Almost has a little sweet taste.

I've heard of roasting it. Making kale chips is supposed to be good too - helps with chip fix if you need it.

With trying to add more veggies into my diet, yesterday a bought fresh kale, any good ideas on how to prepare. I have been roasting a lot more of my veggies since joining SP.
