Yes. Didn't eat any for breakfast in my omelet which I normally start the day off. Went out for lunch at Subway. Ordered my 5 vegetables ala cart, in a side dish. It looked more like a side salad. Felt better when I ate them too.

My son bought a big veggie tray yesterday so am able to get veggies today.

I have loved most fruits and veggies moHst of my life, so this is not so much a challenge for me. Humas with pepper, carrot, celery and cucumber sticks is great for lunch or snack. I cut up a lot of each and find if they are already cut makes it easier to grab at lunch!
Fruits of every kind in season are great
Smoothies are also a great way to get more Fr and Veg. I use almond milk and also protein powder as protein is more of a challenge for me. I rarely get the recommended amount. I guess that is another team.

I use an inexpensive, 15 year old blender for my smoothies. I work with all men and I've even gotten them to eat their fruits and veggies!My husband doesn't like the color but loves the flavor.
A typical smoothie for me is; 1 apple, I do not peel, just cut pieces away from the core. 1 banana, 1/2-1 cup blueberries, as much kale as I can push into the blender! I add crystal light to thin the mixture, I'm sure milk or water would be fine. Sometimes I add more Kale after it mixes and leaves me with more room! I add 1 container (single serving) of vanilla greek yogurt (0 fat) and about a teaspoon of cinnamon and 6-12 ice cubes.
Sometimes I add carrot, banana, blackberry, strawberry, whatever is on sale!
If I were better at planning ahead, I would freeze some of my fruit and use less ice cubes.
Since I am using an older blender, I have to blend longer. Sometimes I have to stop the blender and push everything down with a long spoon.
I have shaker bottles (like what they sell for protein shakes). I store my smoothies in these and freeze. I take the smoothie out of the freezer a few hours before I plan to drink. Once they begin to thaw, I shake the bottle, the little metal ball helps mix everything up AND it's like using a shaker weight!!!

First of all, for the person wanting ideas on how to get veggies for lunch without eating a salad: I want to try the spinach smoothie, but don't have a vitamix or ninja...do you think I could puree it in my food processor enough and then add it to a smoothie in my blender? Does steaming it negate the point of putting it in a smoothie? (because if it's softer, it would mix up better...in theory anyway.

Second, I personally tend to get my veggies straight up...so chicken, rice, veggie (green beans, broccoli, carrots on the side)...fish, rice, veggie. Steak, potato, veggie. Also I'm a big veggies-for-snack person. So some whole wheat crackers and baby carrots in the afternoon. Celery and peanut butter mid morning. Cucumbers with....well, just cucumbers are good with me. lol. Raw peppers with hummus (or carrots or sugar snap peas...anything is yummy with hummus...) Hope that gets your brain rolling on ideas for getting your veg on without salad.

Today was a big FLOP on the veggie front. lol. I have no problem cramming fruits in, (eating strawberries as I write this) but need to work on the veggies...Will do it tomorrow!!!

I can easily have 5-7 servings of fruits and veggies per day but I average 4 of them to be veggies and the rest fruit. My four I get in is because I eat a smoothie for breakfast every morning which has spinach and kale in it. Then I eat a salad for my dinner every night which is at least 2 and sometimes 3 servings of veggies. How does everyone add veggies to their lunches without a salad. Thanks for the help.

Been having a little more trouble with the fresh fruit because it has been so expensive. Have been trying to stick to fruit packed in natural juice or light syrup so that I am getting the fruits as well as the veggies. Hopefully one of the stores will have the fresh fruit on sale because I love the fresh fruit.

So far I'm meeting the goal, too! I'm shocked! Especially since I don't cook...but my boyfriend does, and he's been cooking this week! I have a greens & protein shake in the a.m. that has 7 fruits & veggies worth of nutrients, but I count that as 2. Usually my once-a-day frozen entree (gluten-free & healthy ingredients) has at least one serving of veggies. And usually I eat a banana, apple, or orange daily. So I guess I really can make this work. :)

I have found it easier than I thought to add 5 servings of vegetables. I committed to having 2 cups of salad per day (that's 2) and I have been eating baby carrots for lunch. I also added tomato juice to my morning drink and with one or two vegetables for dinner I am all set for the day!

I found you all just in time! Today is double sale day at Sprouts. I can buy fresh and try for at least 1/2 organic.

Love the idea of cauliflower pizza crust. It's on sale! So that will be one menu item.

I finished week one and now am starting week 2. Ok veggies, here I come. I'd been eating 3-4 veggies and 2 fruits so I'll just stuff down one more veggie a day. This has taken from working up to since I wasn't doing so well on veggies for a long time. emoticon Now I've gotten the hang of it again. emoticon

This challenge is a good one. I have increased my fruit but need to step up the veggies both cooked and raw. I like to steam my veggies or eat them raw with hummus.

i am enjoying adding more plant products in to my daily food intake, even if many are not technically vegetables
Breakfast today included grilled tomatoes and mushrooms with avocado instead of spread on my toast
Lunch was a meat and vegetable mix that included broccoli, carrot & shallots
Dinners portion (already measured out) has celery, carrot, sweet potato, potato and parsnip

I do salads for lunch at work so a side salad will normally give me 2-2.5 servings if i have a side salad or 3-4 svgs of veggies per day,

Great ideas, here! It is always hard for me to ONLY eat 5 a day! I generally eat 7-10, including fruit! I stay within my tracker, too! Delicious! Today I made fresh organic Green lemon aid. Delicious! emoticon

I thought this might be really tough when I started, but it is feeling easy and routine now, I am adding fresh blueberries and strawberries to my morning cheerios (easy and delicious) and serving a salad with dinner that consists of fresh spinach, chopped broccoli, tomatoe, and grapes...tastes delicious with any dressing, but my faves are kraft Catalina, or honey mustard...both are much lighter then ranch and still taste delicious...I'm always full and very proud and I'm down another pound this week

Being fruit and veggie challenged, I think that I might just be able to expand my taste of new and old stand by fruit and veggies after reading these posts. Being creative when it comes to mixing fruit and veggies has never been one of my strong suits. I've post this before on other boards, I am really, really seeing just how important it is to plan, plan, plan your meals. I really need to work on my organizational/planning skills. emoticon

I don't have a problem getting the veggies in. I am a strong believer in shredded kale and also spinach because they can be added to everything. My issue is the fruit. So to get at least one serving and hopefully two I add frozen fruit to my protein shakes, using a blender. Works for me. Makes it nice and thick and you don't have to add ice. And if blueberries and strawberries are on sale, I just clean and freeze them. Same with bananas.

veggies in my breakfast sandwich/ or burrito"( cooked with the egg) ,I make & freeze them.
fruit for a snack with lt cheese or nuts
veggies in my left over lunches,which I freeze & choose from later.
fruit for lunch dessert
veggies @ dinner
fruit if I need a bed time snack
today I'll eat 9 servings of fr n veg!!!! (all in my 1200 cal day.)
Plan for it ,pack it, eat it!!! Not hard @ all!!
If you have an Aldis store nearby ,check it out ,good cheap produce!! emoticon

Have you tried kale? I rinse it, then cut it (with kitchen scissors) into little pieces, keep a bowl of it shredded in the fridge, then I throw it in everything. It doesn't go bad as quickly as other greens, and it doesn't get soggy in soup. I throw a hand full into omelets, soup (even canned soup), any other veggies Im cooking (I suggest sautéing it in a little olive oil to soften it up a bit.)

I'm also a huge believer of using shredded veggies instead of oil In baking. Puréed spinach disappears in brownies. A 1/4 pumpkin purée and some shredded carrots keep pumpkin quick bread soft (eliminate the oil so it doesn't get too squishy).
I also shred zucchini, with a hand held cheese grater, into my pancake batter. I don't need any oil, and it really does disappear. My kids have no idea!

A go to dinner that I make when it's just me Im "cooking" for (ok I eat it all the time, who am I kidding?)
1 box near east cous cous (garlic and herb flavor, any couscous will work but this one has a really good flavor, plus it's organic and only $2)
1 can red kidney beans (dark red looks so pretty)
1-2 boxes (or a bag) frozen steam fresh brocolli
Cook the cous cous according to box (it takes less than 5 min)
Microwave brocolli, rinse beans, throw it all together. It makes 4 servings, and it reheats really well!

So... Who can tell me what (besides soup) I can use leeks for? They smell so good! I have to learn how to cook them.

I'm not very imaginative, so all these suggestions are very helpful!! I grate zucchini into my egg whites for breakfast. Keep baby carrots and celery on hand, and use salsa as my "go to" dip, as a dressing for salads, or topping for omelets. I usually have 2 servings of broccoli with brown rice and 2-3oz. chicken for lunch, which is my "main meal" of the day. Dinners are my downfall, my husband works nights so I don't have to "cook", I need to learn to eat better at the evening meal so I won't want to snack.

My very first change in my lifestyle was to include a green smoothie, with a 3:4 portions fruits:vegetables, daily. I add a piece of avocado (to absorb the fat soluble vitamins), chia and ginger to it. This is my third week and I am planning on making it a habit. Well, I just need to include veggies to any of my other meals. emoticon

I have branched out on my tastes in veggies in the past few years after deciding to take on a vegetarian diet. I stir fry a great deal and try to add as many veggies as possible. I like onions, bell peppers, garlic, carrots, broccoli, cauliflower, brussel sprouts, kale, celery, and cabbage. I also had some string beans or snap peas at times. I use liquid amino acids as well instead of soy sauce to cut down on the extra sodium and calories. To my omelets I add broccoli and spinach with beets, tomatoes, and jalapenos on the side. I add mushrooms to almost everything! My other go-to vegetables are spaghetti squash, turnips, pickled radish, and asparagus. I hope this helps those who are in need of expanding on their veggies.

I'm looking for different veggies to mix it up, getting bored with carrots peas and sweetcorn! want to eat more leafy veg, and less carbs

5 veggies a day...that has been some work for me! I have gone back into "learning mode", I KNOW what veggies are, but there were some things I didn't think as actually being veggies and so I'm working on expanding just how much I can count. But I have gotten better at it and since I am tracking my food it certainly puts a crimp in some of the things I was eating and/or just "popping" into my mouth, because now those veggies are in the tracking system and if I want to stay within my numbers I can't do that anymore!
Fruits are easy enough, I aim for 2 a day and since I really like most fruits this isn't a problem. I am working on expanding my fruit list. I tried one recently called a Sumo, a lot like an orange in size but peels like a tangerine (love that!) and is very sweet. But a bit expensive right now, hopefully it has a "season" where it will be little lower. I will keep looking for more fruits I can try!

Had a salad at lunch consisting of spinach, tomatoes, squash, onions, broccoli slaw, carrots, black beans, grapes (and I know I'm forgetting something...) -- but it was big and delicious!!

I have managed 5 veggies and 3 servings of fruit today. Fresh fruit salad for lunch really works for me.
