Breakfast: Microsalad: **2 fresh Georgia peaches,* 1 red bell pepper, 1/2 head romaine, *cinnamon, 1 T rice vinegar, *1 T concentrated pomegranate juice , *tablespoon of ground flax seed or *1/2 ounce almonds

Adding fresh ginger would be nice with the peaches and pomegranate juice, but I have none right now.

Whirl everything in the food processor except the nuts. I have to pulse mine 4 - 5 times.


Top with sliced almonds or chopped cashews if your calorie plan allows. You need to add the fats from flax or nuts so your body can process the greens.
I even eat this for breakfast!! Yumm!!

*Spinach, *sliced strawberries,* walnuts
rice vinegar, *roasted garlic, 1 *scalion, 1 t. coconut oil, ***bonnes herbes, (I whirled these things in the nutribullet and poured over the salad.

Ginger-Carrot Salad with Cranberries

1 Tbsp. freshly squeezed lemon juice
1/2 tsp. honey
1 tsp. freshly grated or finely minced ginger
1/8 tsp. cinnamon
Pinch of salt
2 cups grated carrots (can use part cabbage)
1/4 cup dried cranberries
2 Tbsp. sliced almonds

In medium bowl, whisk together lemon juice, honey, ginger, cinnamon and salt. Toss with carrots, cabbage and cranberries. Garnish with sliced almonds and serve.

Makes 4 servings.

I ate the rest of the strawberry slaw for breakfast and started a new one. Beet & Pear & white beans in a spinach/onion/sprout micro salad. This is my favorite so far!!

I had the other half of the strawberry slaw (next post down) today. The flavor from BraggsBerry Marinade had almost disappeared. So I put the salad on spinach and added more marinade. Topped it with almonds. And I was back in business.

I enjoyed this very much. Very crunchy. And sweet and sour. I have made it again up to the strawberries and marinade.

I'm thinking I'll put more marinade in this time at the beginning. Perhaps 1/4 cup. But I'm thinking a 1/2 cup will be needed, maybe 1/4 cup raspberry vinegar along with it, or pomegranate juice.

Strawberry Slaw

For this salad, I pulse the cabbage till small, then add the rest of ingredients and pulse about 3 more times. You could chop and grate if you prefer.

*6 ounces cabbage (this salad is colorful in is own right. I like green, but purple would work, or combination)
*60 g carrot (2 medium)
*1 apple peeled and cored
*1 serving craisins
*1 serving chopped strawberries
*2 Tablespoons BraggBerry organic dressing and marinade

Mix. Refrigerate.
*Top with sliced almonds after dishing up, if you want them crunchy.

Tastes even better the next day.

I used to make this yummy salad:
For the salad, mix together the following:
***1 cup broccoli florets - lightly steamed
***6 cups romaine lettuce, torn into bite size pieces
***can kidney beans, drained and rinsed
***1 cup carrot slices
***1 small red onion, thinly sliced
6 oz bow tie whole grain pasta - cook according to package

For the dressing, mix together the following:
***1/4 cup red wine vinegar
***2 Tbsp honey
***1 Tbsp finely chopped fresh basil
***1 Tbsp lemon juice
***1 clove garlic minced
***1/2 tsp ground black pepper
1/4 cup water
1 Tbsp Dijon mustard

Add the dressing to the salad and sprinkle with
1/2 cup grated Parmesan cheese (or use an AA cheese)

One 15 oz can each of *green beans garbonzo beans, dark kidney beans, yellow wax beans
drain and rinse each kind discarding water except for 1/2 cup green bean juice
1/2 fine chopped sweet *onion
1/2 cup fine chopped *red sweet pepper
Combine green bean juice with 3 TBSP *honey and heat to honey melts into the juice.
1/2 tsp Mrs Dash. [has *garlic and *black pepper]
1/2 tsp *celery salt or celery seed if not allowed salt
Mix and let sit for a couple of hours to blend the flavors...gets better over the next day or two

I love this salad ...I used to use brown sugar but changed it to honey to add an AA food. I missed that flavor but also like the honey taste .. Nummy!!! .

Everyday Cool Tropical Salad (main dish for 1, side dish for 2)
3 - 4 anti angiogenic foods as a fruit salad side. If you are serving as a main dish entree, your AA count goes to 5 - 6.


Combine in a bowl:
1 small banana sliced
*1 orange or tangerine, peeled, and sliced to bite sized pieces
*Juice from 1/4 lime mixed with 1 teaspoon sweetener (stevia or *maple syrup or *honey)

You can refrigerate at this time, and continue with the flaxseed and almonds just prior to serving to keep them nutty.

Toss and sprinkle with 1 *T flax seed meal.

If you are eating this for a meal entree,
serve on top of *spinach
and top with 1 serving sliced *almonds.

Nutty Fruited Rice Salad: 8 anti-angiogenic foods, 348 calories

This made 2 servings: Yesterday's lunch, and this morning's breakfast. Make early enough to meld the flavors and chill well. I used leftover steamed broccoli, and Lundberg Weihani Rice I had baked and frozen a while ago, so prep was pretty easy.

In a blender, mix
**1/2 t cinnamon
**1/4 t. nutmeg
**1 serving dried cherries reconstituted in 1/4 c. coconut milk beverage (any milk left goes into the blender!!)
**1/2 c. unsweetened no fat Greek Yogurt (I used Chobani)


In a bowl, mix
1 serving cooked brown rice
**1 cup red grapes, sliced in half lengthwise
**1 apple, peeled cored, sliced, cut to bite sized (my apple weighed 80 grams after peeling and coring.)
1/4 cup chopped celery
**1/2 - 1 cup steamed chopped broccoli
**1 ounce walnuts, rough chopped
**Blended yogurt, fruit, and spices

Mix well. Chill. Flavors meld and it tastes even better 24 hours later!!

LindaF49, that sounds delicious. You've given me tomorrow's dinner salad!!

I did this for lunch today:
Marinated Nantucket Apple Salad (11 AA foods)

In a bowl,
*1 peeled, sliced apple, cut into 4ths or bite size
1/2 c. chopped celery,
30 g. Nantucket Blend (Fruit & Nut blend from Back to Nature (they have it in Publix Supermarket). *almond, *cranberry, *pistachio, *cherry, raisin
A sprinkle of *cinnamon, *nutmeg
2 T Braggberry fat free dressing and marinade, which has *blueberry, *raspberry, acai, goji, *grape and *apple cider vinegar.

Stir and marinate a few minutes while you prepare the rest of the meal.

Serve on salad greens. I used baby *kale and baby romaine which had green and purple leaves. Very pretty, tender, but still crunchy.

If you like to do lettuce roll ups, the marinated fruit and nuts would do well to pulse in a processor a couple of times, and then spoon into lettuce leaves for rolling.

Or you could shred the apple, and pulse the nantucket blend.

I must admit I did that today without processing. I wouldn't have wanted to do that in front of anyone else because the leaves were small, just big enough to fold in half over a couple of pieces of apple.

But is WAS delicious. I'll make the filling and take it and some larger romaine leaves on a picnic to watch sunset in the evening. Next time I'm adding *ginger!

***Turnip greens [thinning them in the garden, wash and removed larger veins chop very fine]
***Beet greens [also thinning in the garden, wash and removed larger veins chop very fine]
***Tomato chopped fine
***Onion chopped fine
Leaf lettuce torn into bite size pieces
***Fine grated Gouda cheese
***Drizzle of olive oil and dill vinegar
Dash of sea salt and ***pepper to your taste

I included in my next week's plan today's featured salad from SP STEPF: "Broccoli-Raisin Salad with Chickpeas," four servings, because it's loaded with AA.

***2 cup almonds, sliced
***3 cloves garlic, chopped
***1 T soy sauce, divided
***1/2 t smoked paprika, divided
***1/2 t red pepper flakes
***1 lemon, juiced
***1 bunch broccoli, peeled stems and florets, chopped into bite-size pieces
***1/2 cup raisins
1 1/2 cups cooked chickpeas, divided
***black pepper to taste
*** onion (added)

Tis the season for Cool Summer Salads

Post your ideas in the Salad thread under recipes: Your challenge is to create a fresh fruit/veggie salad with at least 5 foods from the anti-angiogenic full foods list.

Remember, foods on this list have anti-angiogenic qualities which help your body cut back the food supply to your fat cells. So you eat to starve fat cells and more!!

PS All those micronutrients have amazing health benefits for your body like eliminating inflammation, depression, fatigue, and on and on. Hmmmm, a medicine cabinet in a salad bowl. Medicine never tasted so good!!
