Waldorf Salad Rice Bowl:

For each serving:
1/2 cup cooked rice. (I used a baked mix, baked with cinnamon and ginger)
1 apple, peeled, cored, sliced, and cut into bite-sized pieces
1/4 c. celery, chopped into 1/4 inch pieces
2-3 ounces grilled chicken (dark meat is AA)
Substitute for chicken: frozen peas, or rinsed and drained canned beans. I like chickpeas or cannellini beans with the apples and celery.
1/2 ounce walnuts

Sprinkle with fresh ground black pepper and stir.

(No, I don't add any dressing, but I guess you could.)

Cherry Bowl:

1/2 cup cooked rice. For this I had baked equal amounts of farro, wild rice, Lundberg weihani rice, and Lundberg Jasmine brown rice with a cinnamon stick and pieces of ginger.

I added to the bowl: ground cinnamon, 1 cup defrosted black cherries, 1/2 ounce almonds.

One of my meals last week:
A bowl of brown rice with Kung Pao Chicken

+++2 tablespoons olive oil, divided
+++1 tablespoon minced garlic
+++1 tablespoon minced fresh ginger
+++1 large green bell pepper, cut into 1-inch dice
1/4 teaspoon salt
+++1oz Cashews (or other favorite nut)
Sichuan Sauce, (recipe follows)


Sichuan Sauce:
3 tablespoons reduced-sodium chicken broth
+++1 tablespoon tomato paste
2 teaspoons balsamic vinegar
1 teaspoon sugar
+++1 teaspoon lite soy sauce
1/2 teaspoon sesame oil
1/4 teaspoon cornstarch
+++1/4 teaspoon crushed red pepper, or to taste

In general I liked it, but I felt that it has to little veggies and the Sichuan sauce was a little bland for me. I think that next time I will use a little more red pepper and definitely more veggies.

Start with a bowl of rice. Experiment with adding a combination of 5 or more AA foods. Raw, cooked, fresh or frozen or leftovers, stir fried, cold: You decide
Veggies, fruits, meats, spices, herbs: You decide
