Let's move Deb's Fat Bomb recipe over here!

My fat bomb recipe is a mild adaptation from Rebecca Latham's. She credits someone else too. (Makes 24)

3/4 c melted coconut oil
8 T Kerrygold Butter, melted
9.5 T raw almond butter
3 T Cocoa powder
Sweet Leaf Stevia drops (I used 15 this time and it was fine. The original recipe called for 60)

In a bowl mix the melted oil and butter with the cocoa and almond butter until the almond butter is basically dissolved (the one I get is fairly coarse, so some "grit" remains, but it's like small soft pieces, not disgusting like grit LOL) Add the stevia drops after everything is stirred and then stir well. I pour most of it from the bowl into a glass liquid measuring cup for easy pouring into the molds. I use a silicone "mini brownie" mold that I got at Michael's. Make sure to put the mold on a flat portable surface that will fit in the freezer before you pour the mixture in since you don't want to lift the mold without it. :) (I use a small baking sheet, turn it upside down and put the mold on the bottom. Only takes about 30 min in the freezer until they are set. I release from mold and store in ziplock bag in freezer.

I am thinking of doing a Fat Bomb cocoa version, using cream cheese, coconut oil, stevia and cocoa powder.

Has anyone made any chocolate types they would like to share?

The cheesecake recipe in the Wheat Belly book (original book, not the cookbook) is awesome! I made it a number of times before going keto (sometimes with almond flour crust and once with a pecan meal crust) but it is too many carbs for me now that I am keto-ing, and too sweet now that I cut that out mostly too. I keep meaning to try it without the crust, but just haven't gotten around to it. The crusted version will be a special-occasion dessert for sure this coming holiday/birthday season.

I have used a combination of them as well; rough chopping the nut of choices, and then added to the flour (usually coconut or almond flours) gives that short bread cookie taste adding a bit of stevia and vanilla or almond flavorings.
We don't eat a lot of nut items, but once and awhile they hit the spot.
I do make a flax bread for the family once a week or a muffin. Keeps them happy eating along with my choices. LOL

Nut crusts are amazing. They even seel almond flour/ground almonds now, so I just use that with some butter. Delicious.

The coffee one is on my list to have, Yum

Nut crust work great for desserts. Process your favorite nuts into a rough meal, be careful not to go to far with them or you will get a nut butter.
Add room temperature butter, vanilla and stevia to taste.
Press and chill, add topping or pressing and bake.

Oh this is great! Thank you so much! I would honestly just totally skip the crust, which would save me a lot on the carbs.

But I have been missing chocolate. When I first started a few days ago, I had a dream that I found an aisle in the supermarket that was all "zero carb" food items, and there were rows and rows of chocolate.

Needless to say I woke up feeling both disappointed and pathetic hahah, needed to tell myself to get a grip!

It is so simple! I have a Ninja blender that came with a personal drink-cup blender attachment. I fill it up about 3/4 with my coffee (cold), one scoop of vanilla whey protein, 1/2 to 1 square of Ghiradelli 100% Cacao, and 3-4 ice cubes. BLEND! That is it! Quick and easy with 170 calories in the protein, 7 carbs, and 30g protein. Then the cacao adds 37cal, 2.3g carb, 1.2 fiber, .8g protein.

Slow and steady wins the race.

I make a coffee protein drink in the morning and I add 100% cacao. Tastes like Starbuck's Java Chip! Helps with chocolate cravings and makes me feel like I am getting a treat.

This was a recipe given to me by LIVERIGHTNOW (Kris). It's my go-to chocolate!

Peanut butter idea

If you need to up your fat intake this is a delicious way:

1 T. coconut oil
1 T. SF peanut butter or other nut butter
1 T cocoa powder
1 packet sweetener or stevia drops to taste (Kris uses 8-10 drops)


Microwave the oil and peanut butter until melted and stir well. Add the cocoa and sweetener. Refrigerate until somewhat firm or not firm - however long you can wait - delicious either way.

Sounds good to me. When I need something sweet and low carb, I go really simple and take 1/3 portion of cream cheese stick/bar, slightly soften it in the microwave and then add splenda to give it a little sweetness. I then either add some powdered cocoa or cinnamon and mix it in for a different taste. I sometimes top it with chopped nuts (for me, macadamias pecans, or peanuts) for crunch. Easy and fast!

I tried to eating Atkins Bars to satisfy my ocassional sweet tooth craving (really just for a different taste after eating meat and fat), but I found that the bars would stall me as long as I was eating them. I was stalled (while I was eating the bars) for about a week and a half in December - and when I stopped I immediately started losing weight again.
