I have made and used kefir but it is not "put up" but made over several days then kept in fridge up to three or four days...I prefer kefir water with crystallized ginger or other dried fruit. But it is a "make it now" kind of food as are sprouts and yogurts that are made at home. Good for us but take a little time and planning. I have never done kraut - Momma used to but I haven't been brave enough nor do I have a good container to do it in.
