That is actually why my hubby finally agreed to buy a pressure canner - meat! However, it took our fridge going out on us completely unexpectedly for him to realize we cannot reliably rely on freezers to store all of our meat in. It made him so sick to his stomach that he bought me a pressure canner, a new dehydrator, and a food saver that same week! Of course, he is also loving how my canning repertoire has expanded :)

Yep, I have a pressure canner now and know a little bit more about it. I've been learning to can meat. emoticon

I dehydrate a lot of my foods. I can get 8 quarts of grated zucchini in 1 spaghetti sauce jar! I use the vacuum sealer on my food saver to seal it up nice and keep it good. I also like to use the food saver bags to put dehydrated meals into for storage. Great for backpacking/camping and food storage.

And yes, you do have to have a pressure canner for certain foods. Otherwise you seriously risk botulism. Storing improperly (with rings or stacked on top of each other) is also bad, for you can't tell for sure if a jar has been infected with botulism and since it doesn't smell or anything ... well, let's just make sure we all can and store properly so we don't have to worry about that.

A pressure cooker can only cook foods where as a canner is made specifically to can foods properly. Obviously they both use pressure to perform their respective duties but they perform different duties. They are usually different sizes as well :) Hope that helps!

Did you know hard and low-moisture cheeses can be waxed and stored for 20-25 years?

yes that is what she did! she lived in Chicago! not as cold as you but .... All winter long hanging out sheets on days when it was not raining, snowing, or storming!

What is the difference between the pressure cooker I have been using and the canner.
I will look it up....

Oh I see it has a pressure gage and knobs so the cooker top won't pop off like it did for my mother-in-law with tomato sauce inside. But she tried to open it before it had cooled off.

she had a dryer but hung out her wash, every week it wasn't raining, even in the winter!

I'd like to get one :) My mom has one though. I was thinking of borrowing it this summer and can a bunch of stuff that is supposed to require a pressure canner. Maybe you can get a used one on e-bay cheap?

I have a pressure cooker I use to can beans and non acidic vegetables.
she says I have to have a pressure canner.
Now I don't use it very often and pressure canners are expensive for something I hardly use.
Do I really need what the people in her pressure canner class told her? emoticon

Oh, I also wanted to mention, the way prices keep going up and up and uncertain times in droughts etc, food storage is a good away to help us save money. Oxygen absorbers and mylar bags (if you choose to use the bags) are inexpensive. :)
Some people use the mylar AND buckets.

A good way to prepare for emergencies is to store food in a long-term way. I started storing dry foods with oxygen absorbers. Many foods can last up to 20-25 years when you store them in air tight containers with the oxygen absorbers. I use mylar bags and then put the bags in large plastic tubs, which would keep critters out. Mylar bags can be sealed with a hot iron. Very simple and fast. Many people like to use buckets and then seal them.

I personally get mine on e-bay. Just look up "mylar bags" or "oxygen absorbers". I get the MylarPro ones. Honestly, that's the only ones I have tried but they are the nice thicker ones (apparently there are flimsy ones out there) so I plan on sticking with them.

Please share your tips and ideas on food storage. :)
