I count them all, pretty honestly (most of the time). Well, actually, I don't count them, I just let the Spark computer program count them.
Now and then I forget something or fudge a little, but not much. The main things I pay attention to are the calorie max, the balance of fat, carbs, and protein, and certain minerals that I don't want to be without, like potassium. I eat anything I want that is consistent with the calorie max and the other key elements I just mentioned.
